The rosti fish cakes (made with salmon) are lovely, as are the pickled prawns (though I use a bit more sugar in the marinade than Delia does).

I love Delia and her cooking but it’s such a waste to use extra virgin olive oil for frying! My husband is from Cyprus and would cringe at that recipe

I agree. You don't want extra virgin at high heat, as well.
