If you water log slabs/fences/stairs/leaves etc they don't freeze. You can also put a heat source torches or glow stone and it also stops them from freezing within a certain radiud

You can do 2x2 super trees with spruce saplings

Water saturates soil up to 4 blocks away
Another tip: Snow Golems only does knockback, snowballs doesn't damage any entities
