Phyllis Stokes' Blackberry Jam Cake

- This was the best cake I've made so far. It turned out so light and fluffy using techniques Mom showed in this original video:

I list these tips below.
Ingredients.
1/2 cup salted butter (1 stick), softened
1 1/2 cups white sugar
3 eggs
3 cups all purpose flour
1 cup whole buttermilk
1 cup chopped walnuts
1 cup blackberry jam (I used blackberry preserves)
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger powder
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
Directions:
1. In a large bowl, add flour, baking powder, baking soda, and salt. Mix until ingredients throughly incorporated.
2. In a separate bowl, mix softened butter and sugar. Add eggs one at a time, and mix until blended.
3. Add dry spices and vanilla to the butter/sugar mix. Mix well. Then add the blackberry jam. Mix well (approximately 3-5 minutes.
4. Slowly add flour and butter milk to the butter mixture. Add flour first and last, alternating between flour and buttermilk.
5. Coat walnuts with flour (approximately 1 teaspoon) and fold into the batter. Be careful not to over-mix batter.
6. Pour batter into greased cake pan or casserole dish. Cook at 350F until an inserted toothpick comes out clean. Mine took 45 minutes.
7. Let cool for approximately 30 minutes and then top with a glaze or frosting...or eat it as is!
Tips:
1. Butter and dairy products should be room temperature before adding. These ingredients will mix easier and emulsify, resulting in a fluffier cake.
2. Once you begin adding flour, be careful not to overmix. Like kneading bread, overmixing makes the cake tougher.
3. Nuts have an oily coating which will cause them to sink to the bottom of the cake. Coat them with flour before adding to the batter. The flour will help them "grip" and not sink.

I made 2 of your mother’s recipes yesterday, her 1/2 recipe “something sweet” vanilla cake with glaze and also her orange glaze for country style pork ribs except I used pork chops. I made the cake once before and liked it very much. The glazed pork was absolutely scrumptious and I will make it again for sure, next time with chicken, maybe wings. I felt I should share this with you. I’ve made several of her recipes and have never been disappointed.
Love that recipe..she taught me how to make the best Dinner rolls and her old fashioned fudge..which I made both a couple of weeks ago

I Loved the fiesty nature you could still tell Miss Phyllis had when she was younger. And Mr Bucky, a true Southern Gentleman. I love that Steve has her love of cooking and that it's carried now to his Children. Makes my heart happy and I believe Miss Phyllis & Mr Bucky are smiling when they check on the family from their Heavenly home.

Hello Steve.. I watched your Mother everyday once I found her years ago. I'm 64 now and I am most definitely going to make this with a few tweaks. As cloves and I are not friends 🙄. May choose to do a small amount of Black Raspberry jam puree to a whipping creme for a topping. So very great to see you....again. You have a fantastic grin. Merry Christmas young man. This truly us an old beloved recipe. The first time I saw it, was in the first cookbook my mother in law ever owned. The Encyclopedia of Cookery. She had the first publication, 1949. She made this cake often, it was one if her favorites. My husband's too! 💗
Looking for that same stand/mixer. Not available here in the USA. Other models but not Black/Decker. You got a good one.

I just wanted to say how much I love the way you have arranged the videos on the channel, it’s almost like having a video cookbook and a story book. I do hope maybe when you have time and energy when not working so much- that you will make that cookbook for ms Phyllis (we do so miss her still). You had me laughing with your comments. One thing I’m going to call you on, the machine you used is a mixer. A blender is a different piece of equipment. I figure you already know this and just were so excited about the prospect of cake that brain said one thing and mouth said another. Happens to me all the time. Your cake looked good. You realize this channel has come full circle. You instigated your mom into starting it by your questions and now you have taken it over and do the channel in her honor. You did a good thing then that benefited a lot of people and you’re doing a good thing now that benefits a lot of people. Between you and your mom you’ve taught a lot of people about cooking that may have never been taught before. Good man, good son.

This sounds wonderful! I pick blackberries every year in the Puyallup valley, in the shadow of Mt. Rainier.
The volcanic soil grows berries so delicious, they barely make it to the next day when I get home to make freezer jam, lol.😂

If you have a whisk, they also work well as a homemade sifter. And a fine cheese grater will help with spices you cant find ground - my helpful tips ❤ You Mom would be proud of the cake you made. Have a great night Colonel.

My mom did lots of baking. I was always in charge of the sifting. You need a sifter. This is a winning recipe. Miss Phillis, Bucky now the Colonels crockpot. You will have to show us some air fryer recipes. I got one last Christmas but havent use it yet. Its that 11-1 instant pot. I got so many crockpots I just been using them all time. My go to crockpot is from the late 70s early 80s. Thanks Colonel

Looks really good! Your mom would be proud!! I have made a blackberry wine cake that was good. Of course most of the alcohol cooks out but I made too much glaze and didn't want to waste it so I used it all and it was too much because you don't cook the glaze so it doesn't burn off the strong stuff. LOL

Lol Also what I use for sifting is a wire strainer with a tea spoon, really you can just tap the strainer on the bowl & use the tea spoon 🥄 if needed…. Col. I think your momma would be very proud of your cake, and all the effort you put into this. I liked how you explained all the useful tips, and you did well at making do with what you had on hand. I loved that little Black & Decker you used, and I am almost certain that it would be "Phyllis-approved". I think I shall attempt this in the near future, as I have several pounds of frozen blackberries that I grew on my little 1/4 acre SC prop. I bet it was delicious! You can sift the flour just as well by taking a whisk and stirring the dry ingredients "together". Does the same thing, and less mess! 💖👍

You did good Colonel Stephen. You can shift the flour by using a fork if you don't have a shifter...mix the flour with the fork. Yes a bit of flour to cover nuts or fruit will keep them from sinking to the bottom of the cake or bread.

Nice job colonel! Looks deliciously moist fluffy and flavorful. looks like your improvising with your God given tools worked out just fine when sifting the flour as well. Another little tip that you might be interested in is that you can also stir your flour with an egg whisk and it will fluff your flour as well when you don’t have a sifter.
