How To Make Chicken & Bean Soup with Walnut Pesto - Recipe

- A hearty soup with a taste kick of pesto.
SOUP INGREDIENTS
2 tbsp olive oil
1 onion, chopped
20 oz (560g) chicken thigh, small bite size
2 tbsp flour
1/4 tsp salt
4 cups chicken stock
2 cans canelinni beans, rinsed & drained
3 cloves garlic, thinly sliced
1 tsp dried sage
1 tsp dried rosemary
PESTO INGREDIENTS
1/2 cup walnut pieces
1/4 cup chopped fresh parsley
1/4 tsp salt
3 cloves garlic, crushed
2 tbsp olive oil.
SOUP DIRECTIONS
1. In a large pot, heat the olive oil on medium. Add onion and cook, stirring occasionally, for 5-6 minutes.
2. In a bowl, mix the flour and salt. Dredge the chicken in the flour mix. Add to the pot and cook, stirring occasionally, for 10-12 minutes.
3. Add some of the stock and deglaze the pot. Add the rest of the stock and the remaining ingredients. Simmer for 10 minutes.
PESTO DIRECTIONS
1. In the food processor, pulse the walnuts, parsley, and salt until the texture of coarse sand.
2. Add the garlic and pulse.
3. With processor running, add olive oil in a slow stream.
4. Add the pesto mix to the soup and stir in.

Have made pesto before with pine nuts and basil but that walnut pesto would give a good flavor to that broth and the pan fond from the bottom too. 😋🍲👍

look's good kevin thanks for the recipe i make biscuits sometimes but i mix my dough up and i i grease my pan an pour the mix in the pan bake till brown and cut it like i would a cake--i call it cake biscuits its a recipe from another lady with a cooking show in georgia i think

Oh, hard to replicate sage, but you could go for a different taste with basil and a bit of oregano. Heavier on the basil.

Would using a pestle and mortar for the pesto achieve a better result? I was told the pounding action releases more flavour for a raw pesto compared to the shredding action of a food processor, but that might be negligible when it's cooked.
True, it can make a difference, but negligible for use in a soup.
Interesting soup Kevin. I would not have thought about adding the walnut pesto. Can you recommend a replacement for the walnuts? Sometimes I am a bit allergic to walnuts. Thank you for this.
Pecans have close to the same texture and taste profile. Almonds are harder, but could be an interesting taste.

Kevin, is it OK to use sea salt or kosher salt instead of regular salt?
Of course. Myself, I never use regular salt - always Celtic salt. The regular table salt has a chemical taste.
