Those two knives are beautiful, but may I suggest 2 honourable mentions.
For a fixed blade the victorinox poultry boning knife is as the name suggests made for poultry and breaking down birds and is a pleasure to use with its full size handle. The second and my go-to is the outdoor edge fish and bone a folding fillet knife with pocket clip but it has the tip and belly of a boning knife but with the flexibility of a fillet knife it works extremely well.

I’ve been looking at smaller blade knives recently for birds/small game/small tasks. Thanks to your video I’ve found another new brand/model. Highly thinking about this. Have also looked at the Flyway, CR 2.5, MKC mini Speedgoat. It’s going to be between this and the mini Speedgoat.

.06 thickness AEB-L was originally designed for a razor steel for its ability to get very sharp and resharpen easily, it is compared to 1095HC but without the low corrosion, so think stainless 1095
