Serve and enjoy! Divide the mussels and broth among serving bowls and serve immediately with lemon wedges and crusty bread on the side.

Since they’re getting them live if they can’t pry them open then it’s living. If it’s open and it won’t close when you tap its shell or poke it inside then it’s dead and needs to be disposed of. When people get them from the store frozen they typically throw out ones that are open upon purchase and once cooked they throw out ones that are still closed. I LOVE fresh clams and mussels. I want to try sea urchin sometime. I’m thinking it won’t be my thing but at least I can try it 🤷♂️

there are darker ones(Inside),..and the orange ones are the tastier ones,..after my experience.
