Making Beef Jerky! || Preserving our Leftover Meat Before it Goes Bad! || Dehydrated Jerky

    Hello UA-cam family!
    Today, I'm in the kitchen (again lol) making homemade beef jerky! As most of you know, we are moving to Alaska in 3 short months and I have a freezer full of beef leftover from our last cow we butchered & I don't want it to be wasted & I can't take it across country with us! Beef jerky is a GREAT way to preserve meat & it's tasty & good for you! A protein rich snack :)
    Here's the recipe!
    What you'll need:
    4-5 lbs of beef (or venison, whatever you're using)
    1/3 cup worcestershire sauce
    2 tsp onion powder
    1 TBS minced garlic
    1-1/2 tsp liquid smoke
    1-1/2 tsp pepper (you can also add red pepper flakes if desired for more spice!)
    You'll need enough soy sauce to submerge the beef in the bowl (low sodium soy sauce can be used if desired).
    1. Prepare your meat by cutting away any fat & cutting it into 1/8-1/4 inch thick strips. Put all the meat in a bowl.
    2. Add the rest of the ingredients to the bowl & mix well, incorporating the ingredients into the meat.
    3. Cover & marinate in the fridge for 6-10 hrs. I marinate for 6 hrs. Keep in mind, the longer it marinates, the saltier the jerky will be.
    4. Remove from the fridge & place your jerky strips on your dehydrator trays, ensuring they're not touching or overlapping.
    5. Dehydrate at 150 degrees for approx 8 hrs. When the jerky is done, it should bend easily & have a white texture inside. If it's still pink or red, dehydrate a bit longer, but check on it so you don't over do it.
    And that's it! Homemade jerky will last 1-2 months if stored in an airtight container BUT if you vacuum seal it, it'll last for up to 2 yrs! Thanks for hangin' out with me for another homestead kitchen video, cheers!

    Watching you cut up meat reminds me of my dad setting all of us up at our long kitchen table with sharpened knives cutting block and we would process our own hogs Beef and chickens or Deer, etc.! I miss that time we cooked ate and laughed for several days working on the meats.

    I've had my Excalibur for over 10 years. A well built machine that can make a lot of Jerky in a single session. Yesterday I made about 9 to 10 lbs of 1/3 Venison and 2/3 Beef. You can do yourself a favor with a food slicer. You get uniform slices, with far less work. And working with roasts goes a long ways in making quality jerky.

      Yessss, I love my Excalibur too! And we JUST got a meat slicer this summer in hopes of using it once we get to Alaska to slice up our meat from hunting. Totally agree it'll make things way easier (& faster). Thank you so much for watching!

    Why are you not using a vacuum packing method to freeze meat and prevent freezer burn.
    You will to have to throw out any meat ever again!
    I am looking for a method of making jerky with a roasted eye of the round hat is medium rare. Any ideas how? Thanks.

    Okay, when you're in Alaska, you'll have to make deer jerky. Dang, I wish I was near you to get that good jerky. I buy it from Sams club to eat and put in my homemade potato soup.

      Yes for sure! My brother makes deer jerky a lot because he’s a hunter! It’s delicious! Can’t wait until we get to Alaska & can do some hunting!!! So tell me about this jerky in potato soup?! I’ve never heard of that! 🤔

      @@HomeFreeAlaska yeah you just add it to give a really good flavor. It's just the beef, but I imagine you can use other meats. If you are camping, It's great!

    Can i leave my dehydrated beef jerky in cool dry place ? Are ziplocks ok or is ball glass jar best with their lids ? Thank you 🥩

      Ziplocks are fine for short term but not long term storage. We usually eat our jerky within the first month of making it. It can be stored in jars or ziplocks & always in a cool/dry place.☺️

      No I put a lid on it & place it in a cool dark place. For me that’s just my pantry or kitchen cupboard. You just want it sealed/closed and not stored in heat.☺️

    Eat that whole jar drink half gallon of water I did and almost died it's so delicious 😂 I couldn't help myself learned my lesson little goes a Long way everything in moderation

      If it’s air tight & kept in a cool, dark place up to a year or so. In our house it only lasts about a month!😂 It’s so good. Vacuum sealing your jerky will hold up better for long term storage.😊

    Why is someone voluntarily moving from Virginia to Alaska?
    Over here in Germany, I see these TV reports about living in Alaska, that´s for sure I would certainly never move from Germany to Northern Siberia, even I could do this with a Big Van, because I´m not mad about my actual situation, and turning it more mad anyway :-)
    If I have too much in my fridge, I use it. And to be prepared, I cook some meals and make them ready to go into the deep freeze. This method is called "cook & freeze" which works pretty good. Since I´m not an Eskimo in my daily life, I actually don´t prefer dried fish or any kind of Jerky...

      I have a lot of videos on my channel that talk about why we’ve chosen to move to Alaska, this is not one of them. 😊 But 1st & foremost, because we want to. 😉
      Alaska is a beautiful state, we’ve lived there twice with the military & our youngest child was born there. We are retiring this yr & do not desire to retire in VA as we are only in VA because the military brought us here. 😊
      After a lot of research, Alaska is the state we have chosen to retire in. Simple as that.
      Also, our channel & family’s lifestyle is such that we raise our own meat & like to stock up & prepare for any given situation. I do not prefer to go shopping at the store every time I need something. We grow our own food & a lot of times have a large harvest that cannot be eaten in one sitting.
      So it requires us to preserve. We don’t just dehydrate meat to preserve it, we actually enjoy jerky. It’s a healthy, protein packed snack that’s great for all kinds of situations whether survival or pleasure.

      @@HomeFreeAlaska How can you be retired about your age? In Germany, you now need to be 65 with about 40 years of working to have any money being retired. It doesn´t look you are about that age already?
      For homestead, we have a pretty long season in my area. Usually from March to late October, with usually mild winter. The season is more or or less short compared to Southern Europe. And which is not at all known for areas like Alaska or Siberia.
      I have no idea how you want to do this without growing in heated greenhouses...
      Heating and electricity, from the actual situation, is expensive. In Germany we pay 1,7 $ for one liter of gasoline and 0,40 $ for 1000 Watt of electricity.
      So it might be better to live in Costa Rica where you do not need heating in winter...
      BTW, my Supermarket, the baker, the doctor, the hairdresser, the Home depot and so on is 10 minutes to go, without a car.
      I had been to Arizona, and there a simple trip was 1-2 hours with a car. I don´t think I need that...

      @@brianmitchell3775 Try before you buy. In Germany I would say, it´s a big decision to move 500 kilometers south to Bavaria, or 500 kilometers north to Hamburg, or to the East of the country.
      I know this a peanut for American dimensions, but I had been to many places in Europe in the last 40 years and I know what I´m talking about.

      @@rheinerftvideo2647 we joined the military right out of High School. Here, you can retire after 20 yrs. 😊 You’re observation is correct, we are very young to be able to retire but that’s only because we joined the military very young! 😉
      And I think there is a common misconception that everywhere in AK is absolutely freezing all year long & that’s just not true. The summers are quite beautiful and I’ve seen temps as high as 90 degrees in Alaska. 😊 We will be building a greenhouse at the new property, just as we’ve built a greenhouse at the last two homes we’ve owned.
      You can absolutely still have a successful garden in Alaska, it’s just a matter of ensuring you’ve got the right environment to grow in & knowing that the growing season is shorter than other areas in the U.S. But gardening is actually wonderful in AK. 😊
      I understand that you’re having a hard time understanding our decision lol…but it is our choice & we’ve done a lot of research and lived there twice before. We know exactly what we’re getting into. Thank you for your opinion. Blessings to you!

      @@HomeFreeAlaska Your system with the military retirement sounds much more promising than over here. Most of the guys I know left the German Army at 25 or so and kept on in normal civil jobs like mechanics or firefighters. They need to work till app. 65 years to receive any pension.
      I heard that Vietnam or Iraq veterans in the US got very much into financial trouble and personal problems after duty.
      My best friend (we are both 54 now) used to be an officer on a Submarine. Now he is a headmaster of an elemantary school...

    Tina, can you tell us how you take care of the gun you have in your house and how you teaching you son how to be carefull with that, how and when he should use if nessesery and all that stuff about self protection. I'm thinking about getting licence here in Poland. I wonder what the diferents are in getting licence in both our countries. To be honest i'm getting scarred that i can only use what is comparing to weapon of my aggressor. (Wait, wait i will measure you knife, to not get longer or sharper that yours) law...is sick!

We have a lot of guns & are very pro-2nd amendment...our right to bare arms & protect ourselves & our property. It's a very serious topic in regards to how we teach Parker gun safety and when it would be appropriate to draw a gun for protection.
