Nice work Titli! I used to make brioche several times a week as a baker and always with an industrial mixer. I have never seen anyone make it by hand. Thanks for the lesson!
I tried these 2x, they were brilliant. I have no food processor, so I followed your instructions to a tee. 2nd time I made a double batch and worked them in two separate batches. Thanks much.
Looks like a lot of kneading needs to be done , but in sure it's well worth it, I'll stick to my mixer with this recipe , thank you for another great bread recipe !!
Start with half of the quantity. It's difficult hearing, thinking of doing. Just start one day, step by step, you end up doing it well. I thought of bread making, I could never start it thinking, so tedious. One try, n I liked it.

Titli are you using a marble surface? I have a butcher block counter and I have no trouble but marble is cold and works better. I learned my slapping dough technique from Julia Childs. It's great for disbursing aggression lol Great recipe which I've made often. 2 day old brioche makes the best damn French toast you'll ever eat.:o)
Oddly, my first mix (pre-butter) was very dry and I was wondering if the milk quantity was right but when I added the butter - God, what a mess. But eventually the slime did turn into a great dough and the resulting buns were excellent.
hey, I've just started to follow you and your breads. thank you for sharing your recipes and techniques with us =) i want to ask something, id like to make hot dog shaped breads from a brioche dough. do i have to stretch it like you did with brioche buns first, and then fold them into three; or can i just follow the way of hot dog bread rolls? hope I'm clear enough. thank you =)

He often mentioned you so I wonder if you know if he’s still around. Last I saw he was traveling around Australia filming with his wife and I stopped watching his channel as video and time scale were out of sinc for me. I’m in UK and just realised I hadn’t had any updates come through for a long time. I checked and he’s gone from my channel list. Has he retired ? Regards Gill
You talk about strong wheat flour, but I must ask you, is that possible to make that same recipe with a gluten free flour (in this case which one your suggest me to use?) and achieve such fluffiness? I want so much to be able to make a very soft, fluffy and delicious gluten free bread. Well thanks already for your help :)
LiLiLaJolie You would need to modify this recipe if using gluten-free flours. As I need to make some more of these I'll make a gluten-free version and upload soon :-)

Some people will use a flax mixture. I’m not sure how it works but you might be able to find something by searching “egg alternatives for brioche bread”

God bless your patient hands! I 'tried' to do this all by hand until my frustrations got the best of me and I had to pull the stand mixer out.

Can I skip eggs in gluten free recipes and still get soft bun which hold their shape ? Of course using an egg substitute like flax seed meal ?
