After watching your video, I was compelled to look at some of my older cookbooks, especially the ones that had canned pumpkin in them. The first one I picked up was the Ball Blue book of canning for 1966, which recommended thinning the purée and canning in pints (1 in headspace)for 65 min and quarts for 80 min. Both at 10 lbs of pressure. I would feel completely safe using such a method.
People trip out over the simplistic stuff. Your still going to process and cook it after you open it not just eat it out of the jar! Heating anything 10 minutes kills the botulism spores as well. You go Ali, I fell comfortable canning pumpkin/squash as well!
I live way out in the middle of nowhere so if I want to go anywhere I have to drive at least an hour. I like taking my dogs with me whenever I can instead of leaving them home alone all the time. However I have a puppy she's about 7 months and even though I try to travel with her to get her used to it she throws up in my car at least once each time. Anyway so what I've been doing was I was taking pumpkin puree putting cinnamon Ginger and one more thing I can't remember the name right now I mix it together and then dehydrate it. So far I've had to use it twice on her and I give it to her like a half hour before I go anywhere and it works. I love that I can travel with her now. In fact I'm making more right now I'm dehydrating Puree pumpkin now.
Nice to know we are not the only ones that name many of our items...they each have personalities too! Funny my car is named Pearl sometimes we call her Pearlie and we love her. Also I bought the glass spray oil bottle 2 years ago and use it daily. On Oct prime days amazon had a sale on them and we bought another one. Great little gadget! Love your videos! You are so smart and funny. You and your husband remind me so much of my husband and I. We are just older...in our 50s. We are new at empty nesting too. Also our youngest are twin boys. They are 21 and we can relate how difficult it is when both babies leave home about the same time. It was also hard when they both graduated high school at the same time since they are our babies... 6'4 and 6'1 but out babies never less. Anyway you are so relatable and so smart and thrifty and I really thank you for your videos Ali!
I use old canning flats to clean out my pumpkins. I put up 9 quart freezer bags last year with roasted pumpkin puree and then our in house fridge went out so they all went to the trash. It was a sad day.

I prefer baking both pumpkin and squash whole. I often bake them on a Friday evening, I cook until done then just shut the oven off. Then I grab them out of oven on Saturday morning to process, completely cooled, peel very easy and the chickens get the seeds added to their breakfast!
I do freeze my pumpkin but my easy method is as follows: Mash your cooked pumpkin pulp with your fingers or potato masher. Measure out 2 cups of the mashed pumpkin per freezer bag. Each bag will make one 9”pie. When ready to make your pie thaw out your pumpkin and throw all of your pie ingredients into a blender and blend till very smooth and pour into your pie shell. You will have the smoothest pumpkin pie ever. This also skips the step of adding any water to your pumpkin and pre blending or having to cook it down ahead of time. This method is for freezing pumpkin only.
Hi Ally, even if that’s all you get done today that’s a fair bit to get through. I do not like pumpkin at all so I avoid it like the plague. I did enjoy watching you though. That’s the easiest way I’ve ever seen to peel a pumpkin. Looking forward to watching with the apples.
In the North we call them SugarBabies. I used them in many ways. I only canned once in my life, and I will never do it again so there’s that. I put my butternut squash in the microwave for 10 to 15 minutes, so it cuts easily. I make pumpkin bread, with the pumpkin pulp. I use Butternut Squash to make pumpkin soup. I need those pumpkin stems. I make cloth pumpkins, and use real stems with them.
I have the Carey version of the electric pressure canner/cooker (believe it sells in the US under the name Nesco and under the name Carey in Canada...they're one in the same) and absolutely love it! (Haven't touched my Presto Stove Top canner since getting it)
You can take the canned purée and run it on high uncovered in the crockpot for several hours in order to get it to the commercial pumpkin consistency. You need to keep an eye on it and make sure the sides are kept cleaned off or it burns.

I find the canning "rules" to be inconsistent. My thinking is that if it's comparable in density to any of the "butters" (ie. apple, pear etc) which are safe to can then pumpkin should be cannable as well no matter which method you choose to use. Personally, I do look to other cultures for inspiration and how they preserve things so there's a lot of material out there to learn from. I'm curious as to why you used water in you're puree instead of left over pumpkin water from the boiling, if there was any. It's all added flavor. Thanks for another great video. Someone posted a timing plaque from an old canning plant. The time for pumpkin was 130 minutes. It did not, however, state the size of the cans they used.

This is funny about u doing pumpkins, the day after we learn my granddaughter, she has autism, likes my pumpkin butter I bought. Finding things to appease her taste buds and texture issues can be challenging. So I thought oh heck yeah I need to make her some pumpkin butter now I gotta figure this out cause she ate 3 peanut butter and pumpkin butter sandwiches without the crust. Do u have any recommendations.
I almost made pumpkin butter I. This video. I fully understand how fun it can be to work with the food challenges of someone who is on the spectrum. I pressure can it at 10 pounds pressure for 30 minutes. I haven’t tried water bath canning since it’s a low acid food. If she’s going through it that fast you may not need to can it at all. ❤️
Libby's pumpkin is not Butternut, but rather a pumpkin called Dickinson's pumpkin. very similar to Butternut, but it's the size and shape of a Jack O Lantern pumpkin I'm in Illinois, home of Libby's pumpkin.
I got yellow pie pumpkins yesterday has any body tried them. I did can regular Orange 🍊 last week worked good I made pies one was very good gave one to my son-in-law. Him and my daughter had a conundrum. It was not good and did not know how to tell me. I the next day and my daughter asked me to try the pie. Oh my Lord it was nasty, so they were relieved about telling me. Yeah I forgot to put the sugar in yuck yucky in the trash. Another one today.
I don't have pressure canner in the canning book I have doesn't have a recipe for pumpkin. You mentioned that the Amish people use the water canning method do you know how I can do it through water canning?
There is a great Facebook page called rebel canners. They have great advice. There is a lady on UA-cam and she said she water bath cans hers for 3.5 hours. I haven’t tried it. Take a look around and I’m sure you will find some great advice.

I didn’t bake my pumpkins this year. I used my instant pot. Put in whole. Done with 4 in 2 hours. In the freezer for the year.

Aww, thank you! The twins are tall! Our oldest is way over 6 ft and he’s still tiny to me. He’s in a few of our videos.

I buy all my spoons at thrift stores too. I use grapefruit spoons for degutting squash and pumpkins. Works great. Thanks for the video! ❤️

Jack Russell terriers are a very energetic! You have to be a terrier lover to have one in your life.
Funny enough our first two pups were terrier mixes as well. They were cairn terrier schnauzer mixes and also had so much energy but not like him.

I read the same thing several years ago, that canned pumpkin puree is butternut squash & not pumpkin.
With the texture being so loose, how do you use it after it is canned?
As it pressure cans it thickens back up. It’s only a tiny bit thinner once it’s done and I use it the exact same.
