Welcome to Minivan Camper Gal! I'm Kelly and I camp and travel in a Chrysler Pacifica Minivan, doing part-time van life. Here you will find van build videos, tips on the digital nomad lifestyle, general travel vlog videos, and more. I'm into minimalism, and I eat a mostly plant-based vegan diet. I'm still learning how to do vegan vanlife well! I have some great vegan camping recipes to share with you, but would love some suggestions, too! Sometimes I stealth camp in the city, but I mostly like to boondock. Join me and my camper van as we embark on all the car camping adventures!

Here are the instructions from Nannette: "Dice up the fruit, add some lemon juice, coconut sugar, vanilla and arrowroot powder- then top with oats, melted butter or coconut oil, pinch of salt, almond flour, and chopped walnuts. And of course, cinnamon!"

It's amazing how that little solar tube in only half hour, on a crisp morning, can still cook something that turns out so hot! Thanks for demonstrating and sharing all your first times trying out new recipes in all your little gadgets.

I use mashed very ripe banana in place of butter in this dish. It gets Very crispy with banana.

A link to the recipe please! Thanks to the viewer who submitted the recipe & thanks to you for the demo!! Just wonderful. On the large buying platforms, you can buy the tiniest little level for your table - sticks n rocks can help you balance the surface so you don't waste food or water. Awesome demo!!

Monica from The Hidden Veggies recently emailed a recipe for a blueberry cobbler with a 'crisp' option. Both are on her blog. The crisp called for vegan butter, so I substituted applesauce. I used blueberries and raspberries, tearing the raspberries a bit. The crisp called for a little baking soda, the berry mixture called for lemon juice and zest. I substituted came sugar for brown sugar. I like the idea of the addition of chopped nuts. Baked it in my new GoSun Go using two of the silicon trays. My topping wasn't crumbly, so I think I used too much applesauce. I left the GoSun open just a tad, and it got dark and crisp on top.
Today on a walk I discovered local blackberries are getting ripe, so I'll make it again adding blackberries. I think Trader Joe's has frozen berry blends (other stores may too), so I'll try this when fresh berries aren't in season.
Arrowroot is a thickener, like cornstarch, which you also could've used.

Hey Robin! How cool that you're experimenting with your GoSun too. Ah yes, leaving it open a crack! I always forget about that, but that's great to know it got crisp that way. Thanks!

@@minivancampergal1554 unfortunately I learned the hard way not to force food into the tube...it exploded! They're sending me a new one. Broke my Sport's tube yesterday. Not having very good luck apparently!
Watching your video gave me the inspiration to order some of the GoSun products. I hadn't heard of them, nor of solar cooking. Now I'm hooked!

The Berry Crumble looks easy to put together and you make it sound scrumptious - I'm definitely trying this in the next few days! I'm wondering (and worried) about you camping in the hot Arizona weather, but you mentioned that it was a crisp morning, so maybe you're escaping the extreme heat. Stay safe!

Hey Becky! Thanks for watching! Yes, I've escaped the heat thankfully, and it feels so great to be out of it. That was my original motivation for the van!

Where's the recipe? I love my Go. I got it a week ago, and it hasn't seen a day without use. I use it to cook vegetables, to cook white, red and sweet potatoes, and have heated water in it for coffee.
How about trying S'mores in it? Get some Speculoos cookies at Trader Joe's (they're vegan), some TJs marshmallows (they're also vegan) and a dark chocolate bar of your choosing. I get their 85% cacao chocolate lovers bar. Put cookies on the bottom, then chocolate, followed by marshmallows. I believe leaving the top slightly ajar helps steam escape, and allows browning to occur. Try that next time, or with the second silicon pan left-put it back in with the lid pulled out maybe 1/16-1/8".
Regarding the marshmallows, if you like them, buy a bunch, because they're seasonal, and will be gone after the Summer until next year...a mini marshmallow replaces them in the other months (great on hot cocoa), which is also vegan.

Hey Robin! Check out the pinned comment for the recipe. Ooh, thanks for the recipe - s'mores sound awesome! Also, I didn't know TJ's were vegan, thanks for the tip!

Im thinking you should try a veggie omelet... very easy 2 eggs beaten with a little cream to blend you can use soy milk if you want. Chop up pepper, mushrooms and little pieces of ham optional to take place of salt. Sprinkle some mazorella cheese on top an BAM done. Let me know... fyi its an Italian favorite in our house. 🇨🇮🌞
