    Hi Kelly,
    Nice to see you out hiking and camping again. That was a beautiful desert landscape. Looks like the place Captain Kirk fought the Gorn on Star Trek. (Sorry for the cheesy Star Trek reference). I am so happy your feet and ankle are doing well. You are so creative when it comes to making your own footwear. Looks like you picked a nice place to set up camp too. I see you made yourself a tasty and healthy dinner. You look nice and healthy so the diet you're consuming looks like it really agrees with you. Your smile still lights up the world.
    It's such a joy to see you out enjoying the van life once again and enjoying your solar and battery power. You did your research, made the investment in your batteries and now are reaping the benefits of all your hard work, well done! I really enjoy watching your channel and look forward to all your upcoming adventures.

    Hey Kelly! Your hikes through the park were just gorgeous! All that desert country and ridged, wavy desert rock- amazing! Thanks for taking us along on your first spring adventure. Are you ready for some new recipes? I have an idea for you that is cheating just a little bit… but hardly! I recently tried Blue Elephant Yellow Curry- it comes ready to eat in a box/pouch and I got mine at Sprouts Market. They also have green or red curry. But all you do is reheat it in a pan and I put in some sliced mushrooms, zucchini, orange or red bell pepper chunks and a few onion pieces and let those cook till softened. You could add tofu as well. Then serve over some delicious basmati rice cooked in your rice cooker! Top it with raw cashew pieces and chopped cilantro. So good! And for dessert? How about mango coconut ice cream! You’d need a little bullet blender tho. Bring along 2 cups of frozen mango chunks and a can of full fat coconut milk, plus a bottle of vanilla extract and some honey or maple syrup. Blend up 2 cups mango chunks, 1/2 can of the coconut milk( get as much of the cream as possible) a tsp. Vanilla and about 3-4 Tablespoons of honey or maple syrup- sweetened to your own taste. This would make two servings- so you can even make just half that amount. I’m assuming your mini fridge/freezer could keep the mango frozen…anyways- hope that sounds tasty and that it can be a great meal for you. Love your PCT goals too!

    Those sandals looked comfortable 👌! When our feet are good, walking is also good. And your dinner looked delicious. I think I've just added another item to my menu. I've never tried quinoa because of the carbs. But I can see adding the avocado and some kind of green is enough fiber to cancel out some of the carbs. And the beans' excellent source of protein just adds to the overall healthy benefits. But I know me, best not to overdue on the tortilla chips 😉.

    Oh goody - cooking time !! Look delicious too ! Those sunglasses are just too fabulous Kelly, and your great shoes ! I was a little disappointed in the best thing you did in a van though... Haha thanks for another great video ❤

    It's good to see a video of you out camping! I've watched several of your videos to help with build ideas. I will be moving into my van at the end of June and I know I'm going to have to change some of my cooking habits, mostly the quantity. I usually make a big pot of beans and rice with spinach, salsa, cashew cheese sauce, red and green peppers, onions, and some spices. I eat off it for the whole week because it's so versatile. I can make a wrap out of it, burritos, a dip or just add more veggies to it. I really enjoy it but I won't be able to store it for an entire week at first so I will have to adjust the recipe. Anyway, have a wonderful time enjoying the scenery! Happy trails!

    👋😃👍 Nice first trip, I enjoyed your hikes. Your umbrella/parasol is really nice, I like the reflective top. In the past I have used a small one to keep the sun off, too. I made my first trip out in my minivan camper from Michigan to central Indiana for the solar eclipse. I'm glad your foot and ankle are improving. 🙂👍Take care.

    I haven't heard it mentioned anywhere. You can improve your insulation simply by setting your climate control to reciculate. Made a huge difference few days ago when I slept in my car.

    I did get Dr prepper 1200 watt battery for van. You tube is awesome and don't be afraid to ask questions.

    Check out Evan from “Evan’s backpacking videos” wore sandals for his entire AT hike. I believe he experimented with them on the Benton-McKaye. Perhaps one of his videos addresses his different trials

    I have an issue with tarantulas. They can jump 6 feet! A friend of ours was driving through Arizona with window down and one freakishly jumped on his shoulder!
