Another option for the green plaster would be applying a stucco to match the color of the brick mortar. That way you’re keeping some of the room’s history and the abstract shape might look cool breaking up the geometry of the bricks. Just a thought!
Billy, I’ve been thinking about what makes your channel so watchable. Everyone probably has a different reason, and I doubt anyone would watch who doesn’t have an interest in historic buildings. But also, you’re consistent in a world of inconsistency and you always move forward despite any little setbacks you might encounter. Your channel is a bit of shelter from the storm of world events. Please consider using one of the resin products for restoring the integrity ot the worm-eaten wood beams. It soaks into the wood & makes the wood even stronger. You can use wood filler to cover up & smooth out the beams. If the wood is not too far gone, this would be a good option to try. An expert could confirm this for you.

All that demo will be worth it. Getting this back to the stone and wood beams will be so good. The wainscoting is a good solution to hiding the stubborn concrete.

Another day, another ceiling - and what a lot of dust! It suddenly occurred to me that a long time ago, someone worked for weeks plastering all that lathe. I hope you can save the ceiling, it would be a pity if the room with that lovely wall didn't have the same beautiful ceiling as the other rooms.
Amazingly hard work but Steve did a great job on that ceiling, you all pitch in clearing up the mess which is great. I love the idea of wood pannelling at the base of the walls, it will show off the stone walls once they are finished off. Great job, well done. 💕🇦🇺

You could also try an angle grinder on those bits that didn't want to come off. One of my biggest dislikes of older buildings like your convent, is the mortar and how it just falls apart like packed sand.
I am also impressed with how much knowledge Billy has in every area of the Convent, esp renovations. He has great style and picking out pieces of furniture and refurbishment. Billy likes to say he doesn't have much knowledge in x. Then, he expounds on the floors, ceiling, walls, etc.😊

Agree, although I have spotted occasions when using power tools without ear protection. As someone who has done the same and is now suffering the consequences I would urge everyone involved to take all precautions.

Wood panelling waist height or window sill height would be a great way of overcoming the cement issue and would look nice tying in with the wooden doors. Can’t wait to see the front doors put in to make a grand entrance. Just what this building needs.
That room with the feature wall will be beautiful and even if you do have to cover the ceiling you can use the fancy ceiling corner bits and with paneling, it's going to be a beautiful room.

Amazing how the doors and wardrobe just pop out effortlessly harmonizing with the stone walls. Wainscotting will add to that balance.
