How to make Sprite - lemon lime soda from scratch

- Let’s make some sprite! This lemon-lime soda couldn’t be any easier, and the result tasted very very close to the stuff you can buy off the shelves, although maybe a little fresher. It doesn’t need to require any complicated ingredients, just some time to make what is known as an oleo sacrum which is the key to getting a drink that tastes less like lemonade, and more like, well Sprite.
Sprite is flavored from a mixture of lemon and lime. I always had figured it could be made by just mixing the juice of lemon and lime with soda water and sugar, but the resulting drink would be way too sour, and not have that overarching deeper citrus flavor. So today we are going to use a method to extract the oils from the rinds of the citrus, resulting in a more mellow, deeper citrus flavor.

I use the oleo method when I sell fresh squeezed lemonade. Granted, my lemons and sugar don't sit in the cup that long, after 10 or 15 minutes, the sugar does excrete liquid and oil from the smashed lemons. This results in a MORE flavorful lemonade and I don't have to shake the cups that much to dissolve the sugar.

Just a thought you could add the peels sugar and water into a vacuum sealed bad and sous vide cook at 60° Celsius for 2 hours to speed up the process then strain through a cheesecloth to speed up the process as well as using clerified juice in the end product. Love this recipe.

Muddling the peels and sugar helps the oleo to form faster. I usually let mine sit for a day at room temp so that most of the sugar dissolves
what if you heat it up? can you get more out of the peel that way?
@@MariuszWelna would not suggest heating it. You'll end up with candied peels
@@goldgrub3091 I put it on extremely low heat on a gas stove, only for a couple of minutes. This will made it into a syrup which is much easier to mix into drinks.

I once did this to get lemon scent in my beverage without acidity. It was kinda fun, but now i just buy lemon extract.
Nielsen massey has really good lemon extract. It has alcohol in it tho. There's also lemon paste, which doesn't contain alcohol, but haven't tried.
I used think limes were unripe lemons when I was little 😅😅
I came to this video because I was looking at the ingredients in a Sprite can a couple days ago and wondering that it surprisingly didn't look too bad, besides the excess sugar, and that you could probably make a healthier version of it at home without much problems.
Now that explains it, most of the lime taste comes from a concentrate of the only toxic part of the fruit, the peel. Which is there to protect it from smaller prey, not to be eaten.

Or use a pinch of baking soda, and water. Add the baking soda first.. the acids from the fruit activate it, when you add water, it turns it into natural soda water.

As a food scientist I would say about a week to around 10 days
You can freeze the syrup and it will last forever.
To make it a syrup, simply add a little water to the final product and then freeze it.
Also, it will last longer than 10 days. It is sugar and acid, both are preservatives.

Is it possible to make it refined sugar free ? As in with maple syrup or coconut sugar ?
Is it possible to store oleo saccharum at fridge/freezer and still keep it fresh? If yes, for how long?
What if you added a bit of citric acid to the peels? Would it help oxidize the peels and then extract the oils quicker?

Question: why not zest the peel (grate it off), soak in sugar, add to soda water, then filter the soda water to get the peel out?

I make lime sorbet pretty often, and I wonder how it would taste if instead of using the zest directly, I made and used oleo saccharum? Are there any benefits to using oleo saccharum over zest, if the zest itself isn't undesirable to leave in the final product?
I can come close using more lime than lemon, plus the rinds and using my Soda Stream. I use a blender that liquifies the mixture and adjust tp taste for a close 7 UP

You can just boil the lime and lemon peals and add sugar later, you get MUCH more syrup, but than again, that will be a syrup and not an Oil

@@JuliaC-sp5qk yes but remember guys: fat is flavour. flavour compounds are fat- soluble, you'll never be able to extract as much flavour in a polar base.

@@JuliaC-sp5qk I ever heard Gordon Ramsey said, "No colour, no flavour". I guess why we want to roast/pan-fried our veggies with some oil is to caramelize some veggies' surface area hence deepen the flavour
So what is a good proportion of water and oleo saccharum for a sprite tasting drink?
I think start with half a tablespoon per glass (250 mL) and taste it. It's going to be dependent on how sweet/intense you want it
