  • Try date paste instead of sugar in you next recipe. It's full of vitamins, minerals, antioxidants and fiber none of which you will find in sugar. It taste mildly of caramel and can be mixed in easily into sauces, marinades, dressings and so much more. Dates are also low on the glycemic index.

    How To Make Date Paste:
    Ingredients:
    2 cups pitted dates
    enough water to cover the dates in a saucepan.
    Directions:
    Place the dates in a saucepan and cover with water by 1 inch. Place on stove and bring to a boil. Cover and reduce the heat to a simmer and cook for 15 to 20 minutes.
    Pour the dates through a strainer to cool. Keep the liquid. Once cool place the dates in a blender, preferably a vitamix. Add 1/2 cup of liquid and blend slowly. Add just enough of the date water to blend. You want the date paste to have the consistency of applesauce.
    Pour into a mason jar and cool before placing in the refrigerator. Will keep 2 to 3 weeks in the fridge and longer in the freezer.
    You can enjoy date paste in anything pretty much that calls for a sweetener. The substitution ratio is 1:1 for sugar.
    Simple uses: on toast instead of jelly, in a smoothie, in yogurt, on ice cream, mixed into breakfast oatmeal, to name just a few. Leave your ideas down below in the comments.

    I don’t boil the dates Instead I put one cup of coconut water in a food processor with 2 cups of dates. I blend that at a high speed for at least two minutes, the paste is amazing and I add it to all my baking. I haven’t made a barbeque sauce with it yet but that’s next on my list. I decided to cut out White sugar completely and to tell you the truth I’m really enjoying the date paste.😉🇨🇦

    I make iced coffee at home and use homemade almond milk and date paste instead of sugar to sweeten it up, far healthier than Starbucks and tastes just as amazing!

      Have you tried iced tea latte? Same concept but with a strong loose leaf tea in condensed form instead of coffee ... like a healthy Malaysian cold Teh Tarik :) it’s amazing! You can add a little lemon grass for flavour, or cardamom , cinnamon and ginger if you feel like something more adventurous :)

    I usually soak them in water overnight to soften them. Then i'll blend them with a tablespoon of vanilla, and a few table spoons of the water the dates soaked in overnight. If you boil them you are destroying the nutritional content.

      @@bcqwm5w I do soak 7 dates overnight and drink the water first thing in the morning then eat the soaked dates. The whole overnight soaking is to drink the water.

      Cooking actually intensifies some of the nutrients and makes it easier for the body to digest them--some of the vitamin C or Bs or folate may be destroyed but others are intensified.

    You're a great healthy cook just found your recipe and will use it to make ginger cookies. I am not a baker but wanted to use almond flour and dates for ginger cookies. I am proud to say I am 66 yrs young loss 47 lbs, weight is 125 currently and I wanted to bake a low sugar ginger cookies with dates. Thanks stay healthy 😘 💓

    Wow! Thanks Robin for sharing this easy peasy sweet idea/recipe. I keep dates on hand to incorporate in my smoothies as a sweetener and the extra added benefits you mentioned. I'm heading out to get a *large bag* to make the date paste to keep on hand as a sugar replacement.

    I love dates. Have a big bag with me right now. I usually chop them up in teeny pieces and sprinkle it over my salad. Amazing! Now this I'm worried to try because I know I will eat the entire thing in one sitting!!!

    I love date paste. I have it in my morning porridge (really good with a dash of cinnamon and some walnuts added on top). Date paste is also in middle eastern dessert recipes :) *if you want to cheat, you can buy date paste from some speciality stores, but I prefer to make my own.

    Thanks Robin! it looks delicious! Do you use the remaining date water for anything? I saw someone else's video where they separated the dates from the water, after cooking it, and then boiled down the date water into a syrup? They also kept the paste as well... Also, how long can you keep store bought dates in the fridge after you buy them? .

    I make Chocolate Truffles w/dates, Nuts, Dark chocolate chips...cool, then roll into melted dark chocolate..fantastic low glycemic snack!

    We like date and fig paste for cooking. We blend them and push the paste through a strainer. I cook it down to consentrate the flavors without the seeds and skins.

    I love this, Robin. Definitely going to blend up some and start replacing processed sugar. I love dates but rarely allow myself to eat them because they are rather high in Calories. It's hard for me to eat just a few. hahaha I'm always looking for healthier alternatives. This looks like an awesome one to use. Obviously, it won't change the consistency of recipes calling for processed sugar in the ways you suggest using them. Please let us know if it works in baked goods. I'm very curious.

      @@RockinRobinCooks I just made the paste. I used a whole container of dates minus a few (wonder where those went?) I see what you mean about it having a caramel flavor. I think I'm going to give it a try in my apple/cinnamon steel cut oats recipe. Not sure if I thinned it enough but better thicker than too thin.

      Hi Lena, I keep my date paste in a mason jar in the fridge for about 2 weeks if it lasts that long. You can freeze it in an ice cube tray and then transfer to a ziploc bag for 2 to 3 months.

    I’m going to mix it with crushed pistachios or walnuts ,(and /or both, )and a little butter , then roll it up in the thinnest dough I can make, bake it, make some strong coffee with real cream and get blissed.

      I use and recommend buying seedless. Blenders aren't that great at pulverizing the seeds well enough and you will have hard bits in your paste.

    I make date stuffed cookie: 1/2 cup semolina,1 cup flour,1/2 cup soft butter,1/4 cup of milk,1/2cup sugar,1 tsp yeast,2 tsbp rose water,knid'it a bit let it rest 30m.divid'em to 20 small balls,flaten'em and stuff each one 1 spoon of date paste,close it in a shape u'd like ,fingers or balls ,bake'em in a preheat oven 190c for 18 to 20m

    We use dares in making date cookies not boiled we soften them by either boiling them but with way less liquid you can add the dates directly into milk shakes in some sort of milk and say bananas a dash of vanilla you can make balls of dates but try the softer kind of dates like Ikhlas which you can buy on line directly from Saudi Arabia they will even ship ti the date pate pure of anything you can add it in bread dough or mix it like balls with some nut adding a dash of nutmeg and cinnamon you can chop dates and add them to cake mix with a cup or two of walnuts and pour some date sauce made with sweetened milk or water not too much mind you and pour that on top of the cake sone add the boiled mixed date paste directly into the cake batter again you can add if you like sone chopped nuts un toasted like Almonds or walnuts oh we have hundreds of variety Ikhlas one these varieties that really has a soft texture and a deep caramel taste and it is excellent for diabetics as well. By the way you can store dates in a cool place dark pressed for a year and more if you put it in the fridge or freezer

    This sounds great, it's been many years since I had a date, maybe because I'm married. BUT seriously...If I was to buy a bag of dates like you have, they should be soft, right? I guess I'm asking how I know if they're fresh (besides the expiration date), I don't think they're a big seller here where I live. Do you know if dates could grow mold? The first thing I thought of using the paste in were cookies so I'm dying to see how yours work out. Thanks so much for your videos Robin, I've been watching for years and love them all.

      Sand 28 no dates don’t grow mold they can have bugs like flour or any beans if old and nit stored correctly if they are not sweet then they are very old dates are a great staple if you want to keep them fresh for a long time just freeze them or put them in fridge they are full of nutrients and a great snack for children forget expired dates it will depend on the kind you use the most available one in the US is majdool which comes originally from Algeria they are large and kind of crunchy online you can find different kinds that are more suitable to make into paste look for Saudi date specially one called Ikhlas has a soft texture and a very caramel flavor and the are good in everything from snacking to smoothies and shakes ice cream and baking

    What can you do with the leftover liquid?

      I think that when simmered long enough, the leftover liquid becomes date syrup. I was just watching a video of how to make date syrup.

    You said that date paste can be used to replace White Sugar. Can date paste be used to replace Brown Sugar too.??
