What a great melody! Definitely something to get out there. Fiddle, some sort of simple drum like a tam, bass…. But it’s an interesting question you ask. If you have watched the Playing for Change videos, it’s really amazing how unexpected instruments can meld together so well, from all over the world. Or how the same instrument is played in different regional styles musically (slightly different scales, rhythms, etc). They all add a slightly different feel but stay true to the tune as they come and go. So more about where they are vs what instrument they play. Louisiana, Ireland, Greece, Africa, Middle East, South America can all play against that melody/chords in ways a bluegrasser would not.
There is a line in there that is kind of reminiscent of Crossing Muddy Waters by John Hiatt.
