I had a tail wheel dolly tire that needed a 3.0 - 4 inner tube (somewhat smaller than you wheelbarrow tire. Anyway the video gave me the confidence to change the tube properly. As mentioned the main risk is damaging the tube with the screw driver. I'll fill it with Nitrogen which has larger molecules and does not go down as easily.
Getting the second bead over the rim once the new tube is installed is not in any way easy. (as shown) Especially if you are replacing the tire with a new one. I have changed hundreds of bicycle tires and tubes successfully. After spending 3 hours, two neighbors and one wife later I brought it to a lawnmower repair shop. Screwdrivers, tire spoons, lubricants are of little help. This is a job you pay someone else to do.

Unfortunately, no matter how hard or how long I tried, with levers etc etc, it defeated me. In the end, I had to ask my brother to do it (trained mechanic). He did it with his bare hands, lots of patience, just gently and firmly squeezing the edge over the rim. It took a few tries even for him, but he did say it was harder with a new tyre as well as new tube!
Why did he take the tire completely off the rim only to put it right back on. Don’t get it. I never do that when doing this. Unnecessary, unless I am missing something.
It's much easier to take the old tube out when it is completely off. And it is easy to put the first side back on. In part it depends on the size of the tire.

I don’t do that part, I puncture the old tube and make it super flat and pull it out, much easier
