  • Here is a recipe that we ourselves found from a Swede. Recipes for crayfish can vary a lot but it seems that this has a lot of the basics in it that most people here use. We thought it was absolutely delicious.

    A small tip for you who who do as Simeon´s family, that is fish the "kräftorna" yourself. The water were you get your kräftor is perhaps not as clean as in Simeons. Therefore ler your kräftor swim around in your bathtub for something like 12 hours. That way the empty their intestines completely and you awoid the risk for them not to taste as good as they can!

      Mats Runnerstrom, In Louisiana, some purge them in plain water in a wash tub or bath tub and some put salt in the purge water then plain purge water. The salt water then plain water works almost instantly. Maybe 5 minutes each.

    As a kid in the central valley of California nothing but farms and ranches as fare as you can see ,We just gig them netted them what ever it took to get them in the pot . most came from irrigation canals and holding ponds there was never a scarcity of them no nothing in the pot just drooped then in boiling water and eat them until we could not move it was a great . bot that was some 60 years ago and there still around I guess there not endangered .     I grew up in south Louisiana and crawfish is a staple there but we always used zatarans crab boil but it was usualy 40lbs at a time. This is a interesting method I will try it one day.

    Interesting recipe. I usually use the beer and a good amount of Old Bay seasoning. I do blue claw crabs in the same manner. On a picnic table outside, spread the table with a few layers of clean newspaper or brown butcher's paper....ice cold beer, drawn butter, lemon wedges, or juice, HOT SAUCE 🔥(Scorned Woman is the brand), good friends, and have at them.
    I save the boiled water for gumbo, (if it's not too salty.)

      Anders Jansson - Gumbo (French: Gombo) is a stew popular in the U.S. state of Louisiana, and that state's official state cuisine. Gumbo consists primarily of a strongly-flavored, roux based stock, meat or shellfish, a thickener, and what Louisianians call the "Holy Trinity" of vegetables, namely celery, bell peppers, and onions. Gumbo is often categorized by the type of thickener used, whether okra or filé powder (dried and ground sassafras leaves). The dish derived its name from Louisiana French, which may have derived the name from a source such as either a word from a Bantu language for okra (ki ngombo) or the Choctaw word for filé (kombo).

      In Sweden we just throw the boiled water with all flavours away after we eaten the crayfish. Not so good, we should do gumbo!🙂

      Anders Jansson - Absolutely, the nice thing about gumbo is that you do it any way you like. The only requirement is that it should be like a soup or stew and eaten with a spoon. 😁

    I remember catching crayfish one summer in 6th grade to sell to the bait shop. We then went to Thrifty's and bought a bunch of candy. haha.

      those are not european crayfish, theyre actually from america (signal crayfish) and they are infecting european waters :)))) pretty bad man

    We add some corn on the cob, new potatoes, garlic cloves, smoked sausage and Cajun spice, cocktail sauce and the beverage of choice. Nothing better on a summer evening.

    Oh yah, we also call them mud bugs.
    If they taste like mud, next time add salt to the clean water which will make them vomit up all the mud inside of them. Rinse them with clean water if you times, then just follow your recipe.

    Interesting recipe, We have a russian recipe and the main ingredients are salt and lots of dill. Just like in your recipe!!!!
    dill calls out a delicious flavor in the crawfish and also in seafoods such as shrimp/ loster/crabs!!!

    We put them in anywheres from 30 pounds to 300 pounds at a time depending on the size of the pot. Crawfish is big business in Louisiana. Enjoy them mudbugs.

      Unden har kräftfiske året om och de smaka lika gott nu. Innan kräftfisket begränsades till augusti och september i Sverige så åt man nog kräftor hela sommaren fast då minskade de för mycket. Just augusti är ju bara för att de flesta vattnen har den lagen.

    Do you still have to wait for a government-dictated date to be able to buy those crayfish at the grocery? That is what I recall from years ago, when I lived in Sweden. I though they all came from the U.S. How lucky that you can catch them in your lake!

      the governemnt dictated date came due to overfishing of crawfish in sweden, hence there were no swedish crawfish until after that date. Some lakes , like the one by Simeon, is not under that law. Foreign crawfish would be possible to get all year.

    I can’t believe crawfish are sold (and counted) individually in Sweden instead of by weight. In Louisiana they’re only sold one 30-40lb sacks. Seems more like a light snack in Sweden.

    er det minstemål på krepsen du fisker i Sverige? i Norge er det et minstemål tror det er 9,5cm, her er det ikke tillatt å fange kreps før i august tror det er ca 8 august

    if you poor table salt on them they will purge there intestinal tract befor you cook them. you do not need to some cooks do.they looked good.

    very clever , but boiling for 5m ? doesnt overcook ?
