- Using the orange marmalade we made in our last video, we add five more ingredients to make a delicious nutrient dense breakfast meal. With low calories and high nutrition, it is the perfect breakfast for those of us working on weight management.

We have a version of this in the uk!! Doing what you have done but omitting the cottage cheese.. We use heavy cream and more whole eggs beaten.. Jim hit the nail with cinnamon , this is added to the raw egg mix before baking to taste.. On occasions dried fruit may be added before baking.. The thought is you are affectively making an egg based custard that is baked.. We butter the bread and spread the marmalade over the bread slices and then make a diagonal cut in the slice of bread making a triangle. Lay triangles in rows and cover with egg custard. Refrigerate then bake..

We love bread and butter pudding (here in UK too). It's a great way to get extra eggs & dairy into my OH vegetarian diet. It originated in days when bread & butter ("slices") were part of every meal. Left over buttered bread was turned into bread and butter pudding with eggs and dairy, mainly northern / scottish thing, or bread pudding made in the south that was drier and spiced, with more dried fruit, with stale bread that was soaked in tea.

This recipe has potential. Two additions immediately came to mind, since both are naturals with orange, and they are vanilla and clove. Both add lots of flavor without adding calories. I would probably sub ricotta for the cottage cheese and add nuts on top, since they toast up nicely in the oven. These substitutions will, however, impact the calorie count, but also add a little protein.
This dish would also be lovely made with peach preserves instead of the orange marmalade. For that combination, I would again add vanilla but instead of the cloves, I would add mace. I realize many will run for the cinnamon instead, but perhaps there are some who will think outside the (spice) box. Cinnamon is nice and I use it a lot, but there are so many other delicious spices out there. Cheering you on, Jim and Pam, as you shed the weight and improve your health! ~ Lisa

This sounds delicious! Because I can never leave well enough alone, I would definitely add a splash of almond or vanilla extract and a Tbs or 2 of maple syrup for a touch of sweetness 😊

Hi Pam, Its much like, a recipe for bread pudding that we make, using peppridge farm cinnamon raisin bread. I do use milk, eggs, a lil sugar and vanilla. I love it heated with a bit of half and half in the morning. :)
Oh goodness! I'll bet that "chip" was a shock and funny to laugh about now! I also make a French toast bake but has a bazillion calories so this is a great alternative to work with. Looking forward to your cookbook. Happy Belated Birthday!
Pam: Jim is spot on with the cinnamon. I use Saigon Cinnamon in my morning oatmeal, it has a nice little bite and great perfume. Best of all when you add it to your foods it makes the food taste sweeter without additional calories of more added sugar. It works best when added into food after it has been cooked retaining more of that great cinnamon flavor.
You had me giggling & then laughing out loud my husband (Jim) came in to see what was so funny. I could see me doing exactly the same thing! Hmmm, I add Ricotta to pancake mix, thinking of adding your Marmalade to the mix also.
I use 50/50 OJ, Keto bread and Oat Milk. This keeps it low sugar. And my jelly is Polaner sugar free. You are very special ThankYou.

Sounds delicious! I make something similar with crushed pineapple, flaked coconut, pineapple juice and chopped walnuts in with the cottage cheese. Happy Belated Birthday!

I’ve been reading some of the comments and it’s so interesting to see how we all would tweak the recipe. Here’s my 2 cents:
Cube up all the bread and place in a bowl. Pour some of the custard mixture over them and toss to moisten. Then sprinkle a tablespoon of organic coconut sugar over the bread and toss to distribute it. Put half of the bread into pan with the cottage cheese mixture, then the other half on top, where you would then pour the custard mixture over it. I definitely would add some real vanilla extract to the custard.
I love that you’re using orange marmalade--it’s an often forgotten jam that can be very tasty. I bet the use of it along with the orange juice gives the dish a good flavor boost.
I must eat gluten free, so would have to use a different bread, which would impact the nutrition profile a great deal, I suspect.

I wonder what would happen if you just mix in the egg in with the cottage cheese and the marmalade and then mix all the bread in so that it’s all underneath this luscious mixture soaking it in. Sort of like a bread pudding.

Looked more like an overnight French toast bake.. even a sort of bread pudding if you will... but with less eggs rather then a true stuffed French toast. I use cream cheese, mascarpone, even ricotta depending on what I am making and the mood I'm in.
I literally cut the bread and make a deep pocket in the bread I'm using (like challah, brioche, panettone, French bread etc) and then I stuff it. You can also use two thick slices of bread with the filling sandwiched in the middle.
I would definitely add vanilla extract to your egg custard.. Cinnamon and some sugar..
light brown sugar would work too. You can also add pure maple syrup.. or even maple extract to give the maple flavor but without the extra calories. (they even have butter flavor extract too) Sometimes I'll add wine, depending on what I am going for. You can definitely add nutmeg with the cinnamon for more added flavor... even allspice.
For fall you can add some pumpkin pie spice and/or pumpkin puree, and some cranberries to your recipe.. Definitely add some warm spices like your cinnamon in addition.
Some type of nut would be fantastic in here.. such as walnuts or pecans.
Oat milk and almond milk works too.

Personally, I do think the egg mixture needs some more flavor.. at least 2 Tablespoons of sugar, white or brown, vanilla extract - at least 1/2 to 1 tsp, and cinnamon - 1/2 tsp to 1 tsp. (depends on your family's taste). Some type of maple flavor would be yummy too. (the cottage cheese mixture should have a little vanilla extract as well)
I always add zest and juice to my egg mixture even if it's already in the filling.. I always season / flavor all of my different layers. I will definitely be making your orange marmalade recipe!🙌
I personally love orange and chocolate together(chocolate/raspberry too) ...and chocolate with cinnamon is delicious.. Using all 3 of these ingredients together makes for a really nice French toast. 😋. Yum!
Quick tip... I always add my cinnamon to a separate small bowl first then I add 2 teaspoons to 1 Tablespoon (3 tsp) of the liquid I am using and wisk/stir until it makes a well-combined paste. (if I have to add a pinch more liquid I do.. Depends on how much cinnamon I'm using)
Doing it this way helps distribute the cinnamon more evenly when added to your liquid mixture without all the separation you normally would get.. Obviously you cannot dissolve cinnamon. Therefore, there still will be some separation but not as bad as not doing anything .
I was wondering if you blended up the cottage cheese so the whey was more incorporated and smooth if that would help it be more like ricotta? It Wooldridge add calories but spread the richness of the cheese? I just love this idea, a must try recipe, but first, I need to marmalade. When I was a kid, I didn't like lasagna due to the texture of the cottage cheese. As an adult, I make my lasagna with smooth blended cottage cheese and add an egg. If I made this recipe, I would blend the cottage cheese smooth before adding the marmalade and add a splash of vanilla to the custard.

Iwould let the cubed bread get "stale" leave it in the oven or the counter overnight, cut back on the liquid leave out the orange juice that adds a lot of sugar, use an 8oz brick of low fat cream cheese cut into cubes and stirred into the bread/egg/milk mixture, pinch of salt, put dollops of the marmalade over the mixture, dot with a few cubes of butter and sprinkle BEFORE BAKING with 1T. brown sugar and 1 tsp cinnamon, small amount of sugar, would help brown and caramelize the top

Wow! Very nice dessert idea. You can probably serve it with some frozen yoghurt (I love my Ninja Creami, I am not related to them at all but it's a VERY nice gadget to make low calorie ice-cream/substitutes) or even fresh fruit without disappointing.
I always substitute cottage cheese in my lasagna to save calories. I prefer the taste as well.
I wonder how it would be with ricotta instead of cottage cheese.

@@RoseRedHomestead I hesitate to say. We've had a cool and wet summer here in Muskoka, Ontario. Mid 70's during the day and in the 50's at night, rain twice a week. Normally we wouldn't get that much rain, and the past summers have been very dry, so I am happy for the trees and forests. We had terrible wild fires early in the summer after a very dry spring, but then the rain started.
I hope the cooler weather continues and you begin to get the rains you would normally receive!

I would add some sweetener to the egg mixture, either stevia or sugar. Probably also add to cottage cheese mixture too. Top with cinnamon sugar.

Love your channel. I’m 5’5, 49 years, 132 lbs and work in an office. There’s no way I need 2000 calories per day - except weekends. It’s been my long belief that the FDA is steering females wrong in this regard. How does it even make sense that the kCal reqs are the same for males and females on packaging?
We agree, men and women have different caloric intake needs. It also depends on employment, age, family structure and eating traditions, medical issues, metabolic rates, exercise, belief systems, dating habits, friends and their expectations of you (or you of them), spouses, kids, stress in general, trauma/ PTSD, substance abuse, and so on. The 2,000 calories per day is an average and does not mean that we have to consume 2,000 calories a day. One Kcal is 1000 calories and 10 Kcal is 10,000 calories. The question is what is the average number of calories or Kcal that the average woman (or man) needs to consume to maintain her/his weight, or lose weight, or gain weight? What happens if you have a medical condition that no matter what you eat, you lose weight? Before I found out I had hypothyroidism I went from 195-155 in about 6 weeks and looked anorexic. I was eating massive amounts of food and I was a university professor. I had a medical opinion and found that my thyroid was not functioning properly and had it removed once the tests were completed. This is Pam and here is my 2 cents. They were not suggesting that 2000 calories is the correct level for anyone in particular. It is just a metric that anyone can then adjust to their own level. There are distinct differences in caloric need within any age group or gender. Without a given metric, the nutritional info would be useless.

How is Jim not fat?
When Pam started her medically supervised weight loss program, I joined her. I started at 215 and in five months, I was down to 161 (for a few days) and gradually moved back up to 165 and since then, I have gained another 13 pounds (178) over the last three years or so. I am working on dropping back to about 170 and if I can stay between 165-170, I will feel ok. When I get to between 150-160, I start to look anorexic. The BMI states that for my height, weight, and age, I am in the normal range. But my goal is to return to the 165-170. Jim
