I really like this tutorial. So simple gets to the point. Doesn’t take 1 hour just to get to 1 point. Doesn’t get so technical. Just makes them literally homemade. Doesn’t teach me like it’s a cooking show.

I do these a lot but I salt them just as they come out of the oil. I have also found that a woc is the best way to fry them. With the woc, you can get the oil a little deeper and put in a hand full at the time even stuck together. As soon as they hit the oil, they separate and when they turn the color you like, use a wire dipper to remove ready for the next handful. . Chef Jerry

For a long time I've used to slice peeled Idaho russet spuds slicing them on the thinnest slice on the mandolin, rinsing them in cold water until water runs clear. Then drain them and at them dry, heated the oil in the cast iron Dutch oven to 320F, adding the chips one by one. This prevents sticking.using a spider stir occasionally until the oil temperature comes back to 320F. Remove chips with the spider colander over a bowl. Heat oil to 425F. Return chips to hot oil, stirring until chips start to turn golden brown. Remove, drain, and season with salt or any other taste enhancement.

Having chronic kidney disease potassium is a problem when it comes to potato chips. No matter how low the store-bought ones are in sodium and fat they still have potassium. I turned to homemade chips and was surprised the slices were soaked in water to remove excess starch. In my case, I can soak them for four hours or more to leach about half of the potassium. It is good the cheese grater I recently bought has a slicer so all I need is a bag of yellow potatoes.

You can do the same with green plantains. Also make a Cuban mojo dip for the plantain chips that's delicious: garlic, onion, juice from bitter orange, cumin, olive oil, and butter.

Another way to make crispy chips is to peel, slice on thinnest mandolin. I use an aluminum pizza peal. Place sheet of parchment paper that fits the size of the microwavet turn table. Place the parchment on the peal. Spray the parchment with with vegetable oil or canola oil. Lay the chips on the paper. Don't overlap. Spray the chips with very light coating of vegetable spry and a light coating of salt. Using the peal place the loaded parchment on the microwave turn table. On a 1000W microwave set the time for 7 minutes and cook on 100% high power. The chip should show a hint of light brown. If not nuke them for 1 minute more.

Gene Park I have Mastrad microwave trays I use for making potato chips. May I ask why you peel the potatoes when the skin is where the nutrition is? Also, when I want flavored chips, I put them in a large bowl with a lid, I put powdered salad dressing in the bowl, put potatoes in, then sprinkle more powdered dressing on top of the potatoes, put the lid on the bowl, and shake. The chips go on the tray, microwave for three minutes, let them cool for about thirty to sixty seconds, then microwave for two more minutes. With these trays, I found if I microwaved them for five straight minutes the chips burned, but if I split the time, they normally don't burn.
