I have never heard of this place Agartala and Tripura but thank you for taking us there. People are very nice and humble. Food is very very different but looks very tempting. Tripura used to border Pakistan until 1971. The sheer harted for the Bengali speaking Pakistan was is so high that they never teach the 1947 Independence map properly to Pakistanis.
I may have a bias for Tripura, but DFW - the food and culture of the Bengalis in Tripura is perhaps the richest in the eastern region - just like Lahore and West Punjab retained the best on partition in comparison to East Punjab, the rich culture of Bangladesh migrated to Tripura during partition on this side of the border. DFW, you appeared to relish the Peda, Egg Bun Cake, Mangsho, Haleem. Didnt spot you try the rosogulla and sandesh, Ilish, Gopal Misthan Bhandar for mithai and misthi dahi, or the ghee in Tripura which is arguably the best in the country. The patty at Sudipto bakery is to die-for. You should have stayed in the Forest Rest House in North Tripura, Ambassa, Teliamura, Sonamura, Sabroom to get the best Bengali food. A big thank you for this series on my favourite state. Come again!

Just wanted to let you know what you are calling it as 'pork bharta' is actually called wahan mosdeng. We tripuris don't have any dish which is known as bharta. Bharta is a Bengali word. Wahan means pork and mosdeng means a dish which is made by crushing the chillies. A humble request to you that if you are covering any food make sure you know it's proper name. We don't call it bhorta or bharta. For a very long time it was made and eaten only by tiprasas. Wahan mosdeng is an authentic tripuri food which eaten on daily basis with rice and is also served with sticky rice (wrapped inside a leaf known as 'lairu') known as 'bangwi'. Since Bengalis and tripuris reside together even they started consuming it. And they started calling it as bharta/bhorta. Please stop calling it as bharta because by doing so you are promoting cultural appropriation.
Who are Bengalis to name a traditional dish or change the name of a traditional dish! All the shops in bhagaban thakur chowmuhani (owned by indigenous people) themselves call it vorta and it is clearly written Ruti vorta paoya jay. They have introduced this as bhorta to the Bengali people. It's their fault they shouldn't have done that. If they called it mosedeng years back it would have been known as mosedeng only.

This chop is our favourite childhood item whenever we visit home this is must have item. Actually in our growing age egg sandwich haleem all these were not available . We used to eat Puri torkari, ujjawalar biriyani .
