Excellent jackfruit recipe video Catlin and it's a great idea to share recipes from other vegans that have blogs, social media and UA-cam because it makes the whole foods plant based diet or vegan lifestyle ( i know these 2 have different definitions) more accessible.

Omg, so cool! My family is from Dominican Republic and we make pernil for holiday celebrations too! This year since we're all staying in our own homes I'm going to be making the penil for the first time ever, I may give this a try. My nuclear family is more open to vegan recipes than my HUGE extended family lol!
I love this!!! The only thing I would do is roast my garlic and seasoning first because the pernil when made has a good roasted garlic flavor other than that, this is an amazing looking dish 🤤

This looks so good but I'm afraid to try jackfruit, I find the texture a bit offputting. Is it similar to mushrooms?
Not at all! Make sure you buy young green jackfruit if you’re using it in a savory recipe like this.
It’s delicious and the longer you cook it the meatier the texture gets (in my opinion)!

Last time I made canned jackfruit it made me sick. I made bbq "pork". I eat fresh and ripe jackfruit on the reg and that is fine, but for some reason the canned jackfruit didn't sit well. Maybe I didn't cook it long enough?
