    Ingredients:-
    Eggplant (brinjal) - 2
    Garlic cloves - 11 to 12
    Oil - 3 tbsp
    Cumin seeds - 1 tsp
    Asafoetida (hing) - 1/4 tsp
    Ginger - 1 inch piece
    Onion - 2 (chopped)
    Green chili - 2 to 3 (chopped)
    Tomato - 2 (chopped)
    Red chili powder - 1 tsp
    Coriander powder - 1/2 tsp
    Turmeric powder - 1/2 tsp
    Salt - 1 tsp
    Some coriander leaves (chopped)
    Baingan bharta is a dish from the Indian subcontinent. Baingan ka bharta is a part of the cuisine of some nation states of the Indian subcontinent. It is a vegetarian dish that is prepared by grilled over charcoal or direct fire. This infuses the dish with a smoky flavour. The smoked and mashed brinjal is then mixed with cooked chopped tomato, onion, ginger, garlic, cumin, fresh coriander leaves, chili pepper, and mustard oil or a neutral vegetable oil.Traditionally the dish is often eaten with roti or paratha and is also served with rice or raita, a yogurt salad. In states such as Bihar and Uttar Pradesh, it is served hot with litti or baati.
