If you substitute the pasta for rice (in the first recipe), you have the Japanese dish, Doria. I top it with an eggplant ragu, rather than a bolognese
This could also be a gluten dree option for people :)

So I saw during my last grocery trip at Aldi here in MI, US, a tofu brick was only $1.65 and I was in disbelief. I've NEVER seen it so cheap and thought of you and Daniel talking about tofu prices from the podcast. So it's cheaper than ever to have meat-alternative protein, especially when it seems grocery prices just keep climbing!!

I’ve been buying bags of Yupik cashew pieces on Amazon for this - they’re a bit cheaper than cashews at the store and because they’re pieces and not seasoned we are less inclined to snack on them. Also nice to have on hand for easy toasting and serving on top of stir fries and etc. I store them at the back of the fridge, which helps to keep them fresh but also less likely to get munched.

If you are interested in making a naturally carbonated "soda," i recently came across something called a "Ginger Bug", just with ginger and sugar, (though i think you can make these things without ginger and just use fruit...i forget why they wanted to use Ginger, and i guess any type of sugar), and you let it ferment and it starts developing natural carbonation, probably similar to Kombucha, but you don't need mushrooms...i don't know how long they keep their ginger bug going, but it seems like a long time...The first week, it looks like you need to add more ginger and sugar each day to keep feeding it, then after you put it in the fridge, maybe once a week, though i'm not sure...Seems like it would be good to start a new batch occasionally...You don't NEED to use Ginger, i don't think, i think you can use fruits as well...i wish i had known of these particular techniques a long time ago...If you put it in a bottle with an air-tight lid, you have to open the bottle every 8-12 hours, initially, for maybe 5 seconds or more, so the bottle doesn't explode, then put the lid back on...Though you might want to start with Number 4, as it is the easiest one, which takes less time, and she may not have used ginger, maybe only fruit, sugar, a few raisins, and a few very tiny pieces of sourdough bread, and it takes 24 hours, and you can use any fruit, and you may be able to use any yeast bread, though, not sure...That technique is called "Kvass," so you could always look up more recipes on Kvass, if you want...Number 4 seems the simplest and less time consuming...🐦💗🐦
