I love how these two are so reserved and have gentle humor other channel sometimes are too brash. These two got something I want to watch without visual fatigue.
Seeing the transformation of these two over the years is just amazing and hilarious. Harry has gone from the sensible straight man of the duo to a wacky, over-enthusiastic puppy whilst Joe has gone from a happy, sunny guy to just become more and more cheeky, sarcastic and slightly cynical. Both are so much better and funnier now and are great for this kind of content where they can bounce off each other.
So I lived in Austin for a while... I've tried all these places. I just want people visiting austin to know that there is SO much good bbq around that area. I've had some of the best bbq in Austin from a food truck and some of the worst from a brick and mortar. Those places with long lines are amazing but give those other spots a chance too, you won't be disappointed. One of the best ribs I've had was at a food truck, scotty's, that was a converted short bus that I believe they painted red. Before they sold it from what I was told, the ribs were hands down my favorite in Austin. I've also supported mom and pop. One time I got a 3 meat plate and got home to a to go box full of pulled pork. They're no longer there so it was their own doom. But again, as a true bbq lover, give those random places a shot!!!
Yeah, same for Dallas - but for the format they are using they pretty much have to go to the "winners." Plus there was likely some preference given for who was willing to give them special handling. (like opening on a Thursday for a private tasting) If Snow's had not been willing to let them cut the line then we would not be seeing Snow's in this roundup.
I live around the corner from Interstellar and used to go there often, but since they were “discovered” the line goes out the door and keeps going. Great BBQ, but now one heck of a wait.
Aussie here. We had a BBQ place open up nearby a few years before covid & it was so good. The brisket & cornbread were amazing. Sadly they didn’t survive covid but I still dream about their brisket & cornbread.
Original Blacks BBQ south of Austin is my all time favorite. Great BBQ. Their Turkey shows you they know what they are doing. I always got their smoked whole chicken on Sundays.
Love you guys doing this and all. Was so glad you started to give the sides more attentions. The sides HELP with the entrees and their flavor profiles. Give them more love.
Harry I live in belfast and butchers are getting very creative with sausages. It isn't just your run of the mill pork or beef or cumberland etc.... they are creating all sorts of different flavour sausages so GET THAT DOWN YER NECK.
Yeah, I know proper good quality butchers are sadly a dying breed, but.....find a good one, and you get great varieties like handmade pork, apple and sage or Yorkshire tomato sausages. There's too many to mention here!!
Got a great butcher just down the road from me (Surrey), he does all kinds of sausages. Even has a blackboard outside each day with that days specialty flavors, stuff like curry, cheddar, etc.
Well to be fair its like comparing a granny smith apple and a honeycrisp. They are both very good, they are both apples, but they taste TOTALLY different. Only one of them makes a good pie.
Nah I think he loves this stuff but doesn’t like it when Joe puts down British food when talking about how good the food is at an American place. Like I don’t think any British person, especially a foodie like Harry, enjoys the “British people can’t handle any flavour” meme at all, so if he seems a bit stilted I don’t think it’s because he actually dislikes it or prefers British sausages it’s just him resisting the urge to tell Joe to f* off lol
Nice selection of Austin joints, though Lexington is like a third of the way to Houston. I love all of those places. You did good! I'm all about the pork steak and the sausages at Snow's. That pork steak is meat candy. The way the juices sputter off the coals and it ends up with that caramelized crust is so good. Last time I went, we showed up at 3:30am and were still like #30 in line. Hopefully it's not as bad these days. Nice to see Clay in his usual spot at the offset smokers.
At this point, if you guys decide to have a series around the world eating all kinds of foods, I'm all for it, i even watch you guys videos for eating supplement haha 🙌🙌
When there’s this much tradition and competition to try and achieve the best BBQ, it’s not much of a surprise that all of these places are just unbelievable; not that everyone is converging to one point per say. Great tour, I pretty much did the same back in 2019 with a good friend of mine. Flew over from the UK. Franklin's food blew me away but my favourite was Snow's. That place just felt special and unique. I even have a photo standing next to the lady herself.
Interstellar BBQ is my favorite here in town. The pork belly is fantastic as are their pork ribs. The smoked scalloped potatoes aren't something anyone else does. Stiles Switch and then LeRoy & Lewis BBQ round out my top three.
The best thing of this show is england and USA coming together. I hate the daft rivalry comments. We are so similar, speak the same language, and enjoy all the same shit. We are brothers, so act like it
15:07 Texas BBQ comes from the combination of the cooking of Mexican vaqueros combined with the German (1830s) then Czech (1850s) settlers that settled Central Texas bringing their smoking traditions (and sausages) with them. They used all kinds of meat - goat being the most common. The technique made tough meats tender and succulent. While tough cuts of beef were already being done in Texas, the Jewish settlers that came in just before the turn of the century, certainly helped bring brisket to the fore, with their deli tradition.
terry blacks beef rib is my #1 bite of bbq in texas, the fact its available every day until they sell out is amazing too. i would order just that, with maybe one slice of fatty brisket and some sides.

If you can count Lexington Tx as 'Austin', then Llano for Coopers (pork tenderloin oddly enough) and Taylor for Louie Mueller (brisket). Aaron Franklin worked with (taught by?) Wayne Mueller and the place in Taylor is as old school Texas meat market as it gets. I looks like you went back in time.
A shame you couldn't go to Leroy & Lewis. They are really pushing the boundaries and will amaze you from their brisket burger, beef cheek, Tri-tip, and more. Just amazing. Barb's would have been a great choice in Lockhart. They are getting nationwide attention as the new girls on the block. Lastly, La BBQ is top notch as well. Love the content!

Love these barbecue videos. Probably won’t get the chance to go to Austin but hope to one day. It’s worth flying over just for this reason alone. That looks superb and I’m watching the first place still. We don’t have anything close to this in the UK. Hickory’s is a chain and I was very impressed but can’t be close to Texas bbq.
Check out 225° Urban Smoke in San Antonio, Texas, one of the best places imo. Not sure about other Texans, but always called our sweet tea southern sweet tea. Seeing these is making miss home. Thanks for the fun times and reminders. As far as cornbread, I'd say we eat it more with home cooked meals, like some pinto beans made with ham hocks, or more homestyle restaurants. Always enjoyed puting a decent amount of butter in with it as well.

@@wallbreaker_9358well, the way my dad made it, I make it too. You always want to add the sugar while it's hot, so it melts in perfectly for a good mixture. Plus, getting the right amount of tea bags to sugar and water ratio down, and steeping is a huge plus that my dad taught me. Been making like him for 20+ years now and it's always the best imo. I had a friend from Cali growing up that hated sweet tea until he tried mine lol. Some places outside of Texas, even in Texas sadly, will give you unsweetened tea with ice in it and expect you to put sugar in it, which completely sucks because it's grainy sense the sugar won't break down. Hope that helps explain it well enough. I usually use 3 of the large liston tea bags, low boil for about 15 to 20 mins so the bags don't break, then let it steep covered in the pot for about 45 mins to 1 hr, adding the sugar right after I turn off the heat. I like to do a cup and 1/4 of sugar for 1 gallon of tea made this way.
Hello Fellow Humans, Joe is the adult aka the father. He takes smaller bites and doesn't over eat. Harry is the kid or teen. He takes massive bites that could choke him. He also over eats and has to be told to stop eating. They have a fun and funny back and forth.

Native Texan here. The brisket is tough to cook, and the ranchers would give that cut to the Cowboys, who perfected it, most likely with some Mexican influence from Barbacoa , which is also cooked low and slow. I’m sure the Ashkenazi Jew story bringing it over from Europe is true on the E Coast, but not sure that happened in Texas. Also, the sausage influence in Texas was the German/Czech population in Central Texas. Great episode!
