i disagree about washing mushrooms because human hands have picked them. BUT i do it carefully by not allowing water to get in the underside gills by holding the stem between my fingers-cap side up and let water flow over over the cap which doesn't absorb water. God only knows where the pickers hands have been.:) Nice chicken marsala recipe, tyvm.

Former Carrabba's employee here. This looks delicious, and I'm going to try it to see how it compares flavorwise. I can't tell you how they make everything, but I can tell you that there's no heavy cream, chicken stock, shallots, or corn starch in the recipe.
Hey, I went to Ford Garage Restaurant, they have Lemon Butter chicken called Chicken Henry if you have not tried this it’s really good. I absolutely love the lemon butter sauce and have been trying to replicate it, but still have not been able to. If you have a really good lemon butter sauce please share if possible. If not still try the Chicken Henry at Fords… it’s so good!

Am going to try and move on to the zinger sauce that millers house uses to add more flavors to make with chicken.since it’s almost the only meat they like to eat, other than steak. In Wichita Kansas where I live the marsala at Carrabbas the sauce is way darker than brown gravy. Any idea how they accomplish that ??I will not eat Marsala anywhere else!!

This was amazing! I do have a request ! I used to have a carrabbas near me but closed down. Unfortunately they are nowhere near me :(. I loved the grilled chicken and grilled pork chop, the seasoning was amazing. If you can make one of the dishes, I’d be very grateful!❤❤
Hi Heartluv21, yes the grilled chicken and pork chops are amazing. Carrabba's uses a wood fire grill and it is hard to create exactly at home. But use the same seasoning found on the Chicken Bryan and use your outdoor grill for a similar flavor. You did a great job. All I ever order is Chix Marsala. I have had it about 100 times since they opened in Tampa. I m curious why their marsala sauce is always dark brown and strained. You can order it with or without mushrooms now. They prep both sauces daily. After you added the heavy cream, your was light brown, as expected. Any thoughts on how their's is dark brown?
Hi Christian. Often restaurants prepare sauces they use frequently in the beginning of the evening for use for service that night. When this happens, the sauces tend to reduce as the evening progresses and this will make a darker color.

It's best to use a Dry Marsala for this dish. Carrabba's claims a Lombardo Marsala, personally, I don't find any difference except that it is pricier. Just go with a decent dry one. Thanks for watching and commenting!😍
Charlie Browns has the best creamy Italian dressing I have ever had. I can’t find any store brand creamy Italian that is even remotely close to it. I had something similar at a buffet in AC so I’m not sure if they got it from the same distributor. I just subscribed to your channel because this is such a great concept. Yep. Take any perfectly good recipe, add bacon, and, poof, it's better (except brownies). We all know what to add to brownies to make them better. Of course, the French add cream and butter (except...you know).
Hi Nevada! So no vegetable oil in this recipe but make a slurry, starting with about 3 TBL of cornstarch and 1/3 cup chicken stock. This slurry is used to thicken sauce when finishing. Slowly add the slurry mixture to the mushrooms, etc. until your desired sauce thickness. This may end being the entire slurry mixture or just a little less. I quit eating there until recently because they pissed me off when they got rid of their Cavatappi Amatriciana. I was able to get the seasoned cooks to still make it for me for a couple years as a secret item. Unfortunately, they no longer carry pancetta for any dish, so they can't do that anymore for me. Can you try to copycat this dish?
My lord does Carrabba's over salt the living shit out of every dish imho. Takes everything from authenticity and makes you lose the subtlety of every other flavor you're missing when you taste it. Imo
