  • Baked Chicken Coating (similar to Shake n Bake)
    2 cups breadcrumbs
    2 tsp sea salt
    1 tsp sugar
    1 tsp paprika
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp dried basil
    1 tsp dried oregano
    1 - 3 tsp sage
    1/2 tsp black powder
    1/4 tsp chili powder
    2 Tablespoons cornstarch
    1/4 cup oil
    4 - 6 boneless skinless chicken breasts
    Combine all the dry ingredients in a gallon sized Ziploc bag.  zip closed and shake the bag to distribute all the ingredients evenly. Add the oil and shake again so that the oil combines with the dry ingredients until it’s a consistency close to damp sand.
    Dredge  damp chicken pieces through the coating mixture inside the Ziploc bag. Place the chicken pieces on a foil lined baking sheet. If there is extra coding left over, you may want to sprinkle some of it over the chicken pieces. Bake in a 400° oven.
    Boneless, skinless chicken breasts will need to bake about 20 minutes or until an internal temperature of 160° to 165° is reached.  Bone in chicken breasts, legs,  or thighs need to bake to an internal temperature of 170°, approximately 45 minutes. 
    After removing chicken from the oven, allow to rest for 5 to 10 minutes in order for the juices to re-distribute.

    Looks great. My Mother was an awesome cook she made everything delicious and homemade.She was an Elementary school teacher for almost (40) years before she retired. My Father was in administration (Junior high school Principal until retirement).My Father planted us a beautiful garden every year, and pear trees. Fresh delicious vegetables in the freezer and pear preserves. Those are the beautiful memories I have. My Father passed February 23,2014 🕊️💔

    Sage is a great spice. What’s amazing is I have a handmade spice rack with 40 spices from sage to paprika to Italian seasoning and yet I still have standalone spices for baking and cooking

    We never used it. Because my mother’s family were farmers and raised or grew everything. My grandmother still churned her butter. But her fried chicken was so good that we resisted shake and bake. But it looks interesting for less fat

    I had shake n bake at a friend's house one evening. So next time mom went shopping I grabbed a box. Let me tell you, my dad loved it. He couldn't believe my ten yr old self made it. I love that stuff lol. Thanks for the recipe ! 🥰

      It’s not exceptionally crunchy like it would be if you fried chicken, but it’s got a really nice taste.

    Such a delicious dinner. Sage is a delicate, but wonderful herb. Also goes well with pork. Thank you for highlighting information for temp & cooking time w/ bone-in. Had no idea. You can kick those green beans into overdrive w/ soften cream cheese. Just a couple of tablespoon to them at the very end. Let it melt down, stir to combine.

    WONDERFUL, WONDERFUL! I love Shake and Bake I grew up with my Mom making it at least 2 times a month and I loved it! BUT as an adult the MSG in it did not set well with me anymore 😒yes Shake and Bake has MSG in it. I look longingly at it in the grocery store and maybe once in a great while I bought it and used it 😦.But it has been years since I have done that. I am going to try yours and I am so excited! I'll let you know how it goes! So excited!

    This question is for Melissa. Since you've married has he always cooked, if not when did he start cooking? With all the wife duties,it has to be a great help. Glad he made the chicken from scratch and not shake and bake. People use too many processed foods. The reason I like your videos is because #1. No music #2. You video very well, we see close very well #3. No silliness, we are being instructed very well like in class yet very comfortable. Have a blessed and holy Easter.

    You can add the oil or whatever binder you choose, yellow mustard, peanut oil, basically any wet semi liquid on the protein and then add the protein to the bag and shake.

      We got it at Walmart. It’s called a Retrok Baggy Rack. It’s a great gadget to have in the kitchen.

    The boxed dinner starter kits are great for when you are short on time but need a tasty meal. Doctor it up. Make it your own.

    I made this for dinner tonight. It was delicious! Crispy outside and juicy inside. The flavor from all the seasonings made the chicken so flavorful. I have a question. WHAT IS YOUR RECOMMENDATION FOR REHEATING SO IT STILL JUST AS TASTY?

    I'm going to have to try this coating. When I was young (I'm 76 bow) my family tried Shake 'n Bake, and though it seemed like a great idea, it tasted like it had soap in it to all of us. Since this has all pronounceable ingredients, I think it's worth a try. Thanks, Tom and Melissa.

    Love baked meat. What if I dry meat with paper towel and spray with zero fat butter flavor and dredge meat in mix. This mix sounds delicious.

    Thanks for this video. I watch salt and ready made bread crumbs contain a lot of salt. How would you do this if doing fish. I know it could work but I'd like one for chicken and one for fish.     I always put my bags of coating mixes in the freezer after I use them. They stay fresh and can be used over and over until gone. No waste!

    Thankyou for this recipe. I have done chicken in the oven using corn flakes and very crunchy; I will try this recipe as you have written and using crushed corn flakes. I think the oil will help to adhere them as the sugar. Thanks a bunch.

    You might try some of your white gravy over the chicken. Also use parchment paper instead of foil!

    Looks great! Those chickens were huge! I am going to look for your green bean recipe. I used Shake 'n Bake when my Son was growing up. Now that I am older.     Tom, a really good chicken coating is coat the chicken generously with mustard. Crush up Funyuns fine and add any spices you like to them, mix well. Roll the mustard-covered chicken in them. I find it easier to get a good coating to place the Funyun mix in a platter and roll the chicken in it. Bake like you would any baked chicken. Bake on rack…not a pan. YUM-YUM! Moist, easy and delicious. Let me know if you try it.

      WOW! You know, that sounds absolutely wonderful. I think the taste from the funyons might be just enough. Maybe just a bit of garlic - maybe not. We'll have to ponder that but it sounds fantastic. We have to try this out!

    I prepare mine a bit differently. I do not add oil to the mixture. I coat one side of the breast with olive oil then lay it on the coating mix covering the bottom.. Then I lay the breast on the cooking pan. Then I brush the tops with olive oil then sprinke the mix on top of the breasts.

      @belindascountryliving Store UNUSED mix in the fridge because the oil will go rancid! BUT, if you have already put raw chicken into it, you cannot save it.... For instance, if you make a large batch of coating and don't want to use it all right now, you can refrigerate the extra in a separate container BEFORE you 'shake your chicken'!!
