How do you quick dash like that I've been trying to learn it for my combos lol.

Apply charge jump short cut to your d pad. And then make the d-pad be your L3 button (through controller layout), then just press L3 and aim the direction, and you have instant charge jump.
After that, just jump to the side and dodge to the other side.
Thats the basics, there is more advanced tech then this. But I suggest to start with this.

Search Ian Attar on UA-cam and go to his tutorial (its a kinda old video so you'd have to scroll down.)
