Phone calls require availability on both ends at the exact same moments. The feeling of imposing urgency with that experience makes it seem rude unless there’s a specific reason to communicate in such a way.
I have 7 people in my favorites on the iPhone - only from this people I would answer a call. And they know that a message (written) get a much bigger chance to be replied to then a voice message or a call. Other unknown or even people in my contacts (reduced to 30+) are never answered. They also learned over the years that a message or email is the best way to contact me. I will set up my iPhone 12 mini with similar 5 apps now.
I cut it from the roots and just got the apple watch and forgot about the phone. I'm only missing to take notes, but you can write and see task. You can take calls handsfree and after a month it feels more like a watch, the battery last all day even two days, I just wear it 24/7 and the wake up alarm is the most comfortable I've ever try.

For those who really have trouble with self control get a feature phone. Or get a cheap second phone, use a 20 character password and put the apps that want to avoid eg social media on there. You could only use a parental lock app and get someone to set a password and and set a screen time limit and times of the day. Many parents have thought about how to manage access for their kids. The same can be used for adults. As for a simpler layout, another approach is just to use shortcuts on a screen.
