Wood for the taste, gas for the convenience, either way those pizzas get eaten because they both look really good.
👏👏👏
Wood is best
@@selcuksen8563 Both are delicious ... Citrus and oak wood are not everywhere...Even the bay wood...You can not find easy where ever you go
Gas for the lower carbon footprint.
Apparently wood doesnt give it a special tastse
I have used both. I will always prefer the wood version. Can not duplicate its taste or authenticity but the gas option will always be cleaner, efficient, and more reliable. But I love the whole wood burning smell and theme. Great video.
"Amen Brother... Amen"
Gas is increasingly likely to become illegal or restricted in many parts of the U.S.
Gas is not as clean people often imagine, though. It makes benzene (which gives gasoline its characteristic odor) and particulate matter (the primary carcinogen in cigarette smoke) and carbon monoxide and nitrous oxides (which cause asthma, are potent greenhouse gases and pollute out waterways and can contribute to eutrophication among other things). Wood makes a number of things like that, but in quantities and in ratios and balances we are made to process, and also doesn’t really make benzene.
Thumbs up for Vito! I like the gas for pumping the pizza more, but I think WOOD is best due to taste and if it was hotter, it would have pumped up more. Gas is probably more consistent and easier to maintain.
I love the flavour of the wood fired oven personally. But I’m sure for ease of operation the gas would be easiest. Not sure on running costs. Here in Australia, hardwood is stupid expensive.
There's no difference in flavor. Pizza cooked in gas, electric or wood/coal tastes exactly the same. Most of the "flavor" of pizza is from the high temperature charring and pizzas do not absorb any smoke flavors.
With all the fires, yall have almost no wood left!
Wood is overrated. The flavor difference is very slight since the pizza is only in the oven for few min. Gas can be regulated for temps quickly and no messing with wood
Ciao fratello!!
I prefer wood. You can taste the difference every time.
Thank you for your videos.
Fellow italian here and my dad is a master Baker for 50 years. He makes the best pizza and bread in Montreal.
Dear Vito, I’ve never worked a gas oven but the video has given to me a very good sensation. In this moment I need to decide if a gas burner will help me to keep the same temperature in stone during the night. With wood is difficult when you have the stone completely full of pizzas minute by minute. Alexis has helped me too much with his tips, I have changed the wood also to create more flame but I need more space inside the oven. Next one, a mixed oven! Thanks so much, Silvia
I gave my friend yesterday a piece of crust from pizza made in a gas pizza oven, he thought it was wood fired before I told him. Wood offers a nice smokey flavor, but sometimes it's imperceptible. Gas is easier to control temperature, so I prefer that
Dear Vito Iacopelli. I like the Gas Oven Pizza best. But whichever makes you happiest Sir.
From Craig Lee. UK.
I'm certain they both are perfect in there own respects.
You... Vito the Creator are perfection. Thank God.
AMEN Brotha!!🙏🎆👏
can you also test cooking via an electric oven like the Italforni? that would be great!
I know it's kinda randomly asking but does anyone know of a good site to watch new series online ?
@Warren Oakley Flixportal =)
@Emerson Devin thanks, I went there and it seems to work =) Appreciate it !!
@Warren Oakley happy to help =)
I have a (new) gas pizza oven at home, with the option to burn wood or a piece of wood to add taste/flavor. I haven't used the wood option, yet, as the gas fire is so convenient and less messy. I'm still on the quest for the perfect pizza dough, so once I land on one or two, I might throw a log in to bump it up a bit. I've been watching your videos nonstop and my first batch of dough was your Napoli-style pizza dough. It turned out pretty good, but I'm going to give it another try to make it even better. Thanks, Vito - love your videos (and can't wait to visit your place in LA someday.)
I agree with you... I like the option of Gas and or Wood... just incase
What is the name of your gas pizza oven?
I think there was more color in the wood fired dough; but they are both beautiful looking pies. What was the baked temperature for the wood and gas Vito?
I prefer the gas for ease and it gets hotter quicker. There are hybrids out (Just ordered one) Alpha Brio that you can burn both at the same time. I will know more next week. Love the channel, I have learned much.. much respect!!!!! keep the videos coming. Thank You
1) Wood - the taste and "gli amore" the aroma of the fumes!*
2) Electric - since its wide available
3) Gas - Well it cooks and if you know how to work with electric owen like Vito I think it is quite nice
Kudos!
*In my hometown Denizli, we have our special (Denizli Tandır / Denizli Kebap) kebap which must be fumed with special type of wood to enhance the taste and the smell.
I use a gas oven from Fontana Forni on Saputo stones and the results are amazing, can’t tell a difference with wood.
Thank you for the channel, great tips and techniques👍👍🇮🇹🇮🇹
Im looking at a Fontana gas, would love to hear what model you have and more info like gas usage/ type. Thanks
@@timothypiper6215 did you ever get a FF oven? thoughts?
Can you run wood & gas at same time? Like have small bits of wood burning with a full gas flame ?
I have a wood Forno Bravo - just an amateur backyard pizza chef. But the results are amazing even for me. However, it takes nearly 3hrs to develop the heat and coals needed to make 4-5 pizzas is an awful lot of work. That may out weight the results for the at home chef.
3 hours?? You need different wood.... 3 hours is to long...
It’s better this way. The whole video in english. Good job 👏🏻 Thanks for sharing your knowledge. 🙌🏻
I like wood oven pizza because test is amazing
I think it depends. Economically, in some countries gas would cost much less than wood, beside they have lack of wood. Gas also takes much longer time and consumption to heat floor. But when it comes to the taste, nothing beats wood in all kind of cooking. I have owned both of them.
That's why I got the Ooni Pro oven for my backyard. Thought I'd spend most of my time cooking with wood ... but the gas is just so great there, it's almost all I use in the summer.
@@leoelias77 I'm terrible with reading UA-cam notifications - just saw this. Yes - there is a difference and it is noticeable. I just tend to make 10 or 12 pizzas at a time (we entertain a lot) and it's tough to keep a wood fire going like that. I do have a smoking gun ... maybe one day I'll just try using that to give it a little extra punch.
Next video try using different wood logs to see which one like the best. Oak, apple, pecan just to mention some.
Thank you Vito for your amazing channel 😊👍🏼it's great to have so much detailed information about the art of pizza making. 😊many greetings from your neighbors Greece🇬🇷🇮🇹
is this a stone dual fuel pizza oven for outside? this is what I am looking for
Vito, what you suggest if I have only electric oven??? (Its maximun 250 dgrs.) how to increase temperature inside the oven??
I wondered if because if the quick bake if the wood would have time to flavor the dough. I’ve only tried gas on my small oven but want to try wood. What type of wood do you like orange, oak, pecan, etc?
Orange for life but to maintain the temperature u need olive wood
Hello Vito, i prefer wood by far, but gas is good also (with a real napolitan pizza).
Can you compare fridge fermentation VS ambiant air fermentation ?
Thank you so much.
wood oven pizza with gas assist. 2 in one but hopefully i can get my pizzeria open 2021 in mesa Arizona
Both look great! I prefer wood over gas. I have two wood fired ovens. And a wood fired oven food truck. You can really taste the flavor difference..Keep up the great vids. Love seeing what you do next.
I also want to install wood oven on food truck in india. Plz send me ur food truck vedio from which I can take idea
@@HappySingh-gf9rd Look up Mystic Mountain Pizza. We have pics from them being built and in action. Must have very dry wood. Not like Vitos pizzas. He is truly a master. I'm still learning. More of a New York style
Ciao!
I am just about to build a neapolitan wood fired oven in my garden and I am wondering if I should include the gas installation in it.. what do you think?
Maybe you could make a film with some advises how to do it on your channel?
I am huge pizza (and your channel) fan! I am addicted to neapolitan pizza to be honest:)
They both looked great. Can you please tell me was there some wood added on the gas oven as well? And is so is that something that can be done regularly?
Thanks for another great video Vito, you’re my hero!
I always use my gas oven and the pizzas are really great, but you can’t beat the wood fire oven- Life goals! Lol!
Vito!!?!? I was waiting for you to try both and tell us the differences in taste. 😔
He said at the start of the video there is no difference in taste, only appearence.
Witch one you like more wood? Or gas?
Optical the result of gas...but I think here the object is the flavour...so Wood bake is way better
vito iacopelli I believe wood is better flavor
I like the WFO because we hand built a WFO... ;)
I think the gas oven can give bring out the flavor of the ingredients more because they are not masked by the wood flavor. Wood is great, but I respect gas as well.
Nice
Hello. Thank you for the great videos and the most delicious pizza’s! Thanks What’s your opinion about using briquette wood in wood fired oven? Thank you
I prefer wood. Vito please make a "wood vs eletric oven" video!
That's not even a contest 😂
I like your Videos !! Greetings from Germany!!
They both look great. I’m looking into the Alfa hybrid oven.
Hey Vito, I just bought the OONI PRO oven. Will it give me similar results to this? Both wood fired and gas? Awesome videos by the way. You inspired me to buy the OONI pro and cook better pizzas bro. Nice work
Vito whats the temperature on the Wood fire oven??
Difficult to say which is better for the following reasons: 1. the pizza was nearer the flame in the wood oven, so it got more radiant heat from the flame. 2. No info on the temperature of the floor in each case. 3. The split screen did not say which was cooked in the wood oven and which was cooked in the gas oven.
Both are good because you are the Baker 👍👌
What’s your favourite toppings Vito
WEIRD WILD PIZZA mortadella
Clearly not pineapple. But only weirdos put pineapple on pizzas
I prefer wood, but, all options are good!! I love pizza 😋😋
They BOTH look awesome but I feel the wood-fired adds a smokey artisan taste, especially on the dough😋😋
Maybe add little wood pellets
I agree
@@gabzgabrielgg
OH MY GOSH... You are a genius ... I like that idea
It’s an easy one. Wood is by far the best flavor but gas is the easiest
We use a gas brick oven at our Pizzeria! Looks like yours! 😍💕
Where is your pizzeria
Me gustaria saber si el tiempo de coccion es igual en ambas opciones o hay alguna diferencia de tiempo??
I guess wood oven is comfortable in heating the floor and less time as I used both. In taste factor no doubt wood oven wins. Considering also gas is more cheaper in some countries while wood is cheaper in others. The coast of making the pizza plays a big role here.
They are both beautiful, what type of wood do you use?
they both look abslutely amazing 😍
the options are excellent!
Para mi opinión vito amigo soy mas fanatico al horno a leña le da a la pizza ese sabor especial a la masa saludos y abrazos desde uruguay 🇺🇾
Hi Vito. Met you very briefly at the pizza expo in Vegas last year. Thank you for the video! Both pizzas look great. I also have a passion for making pizza Napoletana. I've practiced with both types of ovens. Going by memory I don't remember a huge difference in taste, but I probably enjoyed the overall taste experience with the wood version. From my research at very high high temperatures my understanding is wood does not impart flavor because of the really high temperature and very fast cook time but that it does give humidity to the cooking pizza because of the water in the wood. So I am thinking it potentially also then gives aroma, the perfume from the burning wood. So it would give the pizza a little more softness with the wood burning oven pizza and then I suppose the perfume with the wood. Do you think the wood version was more flavorful because of the perfume from the burning wood to give that overall taste experience, or do you think the wood actually imparts a direct flavor into the pizza even with the very high heat? Thank you.
I use a pellet (oak) smoker tube in my Ooni Koda. I get the convenience of gas and the wood-smoked flavor.
Dear Vito, how can I add smokey wood flavor in a gas oven? I heard about a trick that is being used by gas grill owners, they use wood chips in aluminum foil. What would you recommend to someone who is baking pizza in a gas-fired oven?
Whats the name of this pizza oven? And can someone tell me pls whats the top brand for pizza ovens ? Thx
Does the wood enhance the flavor of the crust?
Would it make a difference if the oven never had a wood fire in it?
I'm guessing that the smoke still is noticeable even though the flame is gas fire .
Just a question,I don't know this of course.
I've just used gas with my Pizza Party oven so far. Definitely a hotter oven and very easy to maintain. Interested in trying it with wood soon.
Your the best pizzaiolo 👍🏻👍🏻👍🏻👍🏻
Both look perfect, I choose wood for the flavour and authenticity.
Hi Vito, could you please tell me which mozzarella brand and type you use on Margarita pizza?
I use di Stefano cheese
vito iacopelli ovalini mozzarela?
Both of them are good ,depends from the recepi of the dough.
I like both of them.
Bellissimo video bravo a Vito!
Simple kitchen pizza domani esce in Italian
The wood fired probably cooked slower, so mozzarella melted better.
Neopalutsn i
The wood Pizza looks better.....and i think the taste is better!
Hey, bro, good stuff!!!
What is the name of the music track?
Thx.
Hello Vito, I love your videos and Pizzas.
Some of us don't have wood nor gas oven. What about comparison between home gas oven pizza vs electric oven ( max 250 C), and cook time difference
In oven with wood you can see stone i black(means its not too high temperature ) in another one you see white stone ,high temperature that is big difference every second...
For me its gotta be cooked with the wood ....natural heat and more flavour
Gas is also natural;-) I’ve been struggling to decide myself looking for the perfect outdoor pizza oven; gas or wood fired oven. BTW Vito’s videos are all awesome!!!!
What is the easy way to make pizza dough?
Per i miei amici italiani domani esce lo stesso video in italiano ;0)
Ciao Vito, come faccio a contattarti in privato?
Vito! In one video you said that you have your own yeast - could you make video about home made yeast? Thanks and love!
Sandy White yes
One of the main differences is when natural gas burns it generates mositure, but the charcoal or wood don't.
:o
Hi Vito, what is your favorite type of dough mixing machine?
Did you check the temperatures of the ovens if they are equal? The pizzas outcome is quite different
How do you get the bottom of the gas version oven hot enough??
Does wether it’s a gas or wood oven affect the taste?
I like gas options. Greetings from Poland near Krakow 🍕
Auschwitz?
Maestro, I think the wood pizza tastes better, but the gas is easier and quicker for a small group of people and STILL produces a TASTY PIZZA...
both look good could tell the gas oven was hotter. Wood going to cook different every time with temps... but that makes a true pizza guy knowing how the oven cooks... I am just trying to keep up with my 650 degree deck oven here at the house !!!! I can crank out some nice pies !!! One day going to build me a wood fired oven
to me the wood looks better, plus the wood/smoke would add more flavour/taste to the whole pizza so it would be wood fire for me... in the end Pizza is Pizza so just give me all the pizza!!!
How hot should be the gas oven to cook a perfect pizza napoletana (60 percent hidration ) ?
Vito.. come stai... hey they look about the same of course I know the wood will taste better. Please tell me the difference in the time to cook wood vs. gas....?
grazie and always for your channel!
the wood taste is special ! so the winner is mr wood !
Why
Im from malaysia, Wood oven is best👍👍
The taste and looks are for the individual person..
But as always ..!!! Beauty is in the eyes 👀 of the beholder..🤓
So I will eat them BOTH Vito 🍕. 🤓. 🍕
Bon Appetite 🍕🍕🍷🍷
wood is best
For practical purposes no visual difference at equal oven temperature. The wood however would impart a subtle smoke flavor.
No. Pizzas do not absorb smoke so there should be no flavor difference. I believe caputo flour company said pizzas tasted the same when they tested electric/gas/wood and there was no difference. Even when you dome the pizza after baking, I would guess most of the smoke dissipates.
Mo Sabri,
Gotta disagree. I've operated an outdoor wood fired pizza/bread oven since 2007 as well as a BBQ food truck catering business since 2000. When you bake bread there is no smoke flavor detectable because the oven has been heated to the white ash stage and then swept out clean to bake the bread, so you are correct in that case. However when it comes to pizza and BBQ you have an active fire burning in both cases that does impart a smoke flavor. If that wasn't the case there would be no such thing as smoked BBQ meat or the smoked coloration and taste of meats such as turkey or sausage done in a brick oven. The intensity of the smoke flavor is less in a pizza oven than a smoker pit but it is still there. When it comes to pizza the key word is, as I stated, "subtle". As far as Caputo goes they are probably trying to sell their flour to a broader market. In other words, they have an axe to grind. I don't.
@@johnvasko4035 No. Caputo just sells neapolitan pizza flour and their market is just anyone that wants to make neapolitan pizza. Them saying there is no difference in flavor would not affect sales because people would still use their flour.
They just happen to have tested and not found a difference in flavor between cookers. Pizzas do not absorb much smoke and the quick cook times make it even less so. Not much smoke flavor will be there after 90 seconds and the "doming" you do when you cook a pizza is so that the smoke lingers when you remove it, but that smoke will eventually dissipate.
The main flavor of high heat pizza is char. That flavor is not dependent on the cooking method, ore the temperature. Have you ever had a neapolitan pizza cooked in a 900F electric oven? I have and there's no taste difference.
Mo Sabri that's incorrect. They make flours suitable for bread, pasta, and deserts too.
@@johnvasko4035 Yes but you are not making sense. How does saying that pizza cooking method having no affect on flavor affect sales? This doesn't make sense. If anything saying that wood fired pizza gives them a smoky flavor is a way for you to charge more money and convince people that wood fired pizza is what they need, when really "wood-fired" is just a gimmick. YES wood gets hotter than gas, but for the most part that's temperatures that very few neapolitan places care to cook at.
Is wood healthier?
Love the vids!!!
heck yah! awesome channel :-)
Is 600 degrees is hot enough for Pizza?
I have a wood oven in my backyard and I hardly ever use it. It takes almost 5 hours to heat up. It's not worth it for a couple of pizzas. Sad because I really enjoy using it. I was thinking gas might be quicker. But unfortunately can't afford to start over.
Hi same situation im here in palawan island of phillipines on a beach i jus found a guy to make me gas bur er installed i think 2 high presure burner fir 7500 pesos thats about less than $150 usd dont give up da ship.im leaning towards dat that way i have wood n gas.hope this helps
I’ve just converted mine to gas can be done very easily
4 me Old style , wood !! But it give another qustion what kind of wood? From olive from ornge ??and so...
I bet the wood tasted better, both because of the wood and the slower cooking.
Merci pour vos video 👌👍
Ouuuuu Vito How much dough do you use for a pizza? And how much yeast should I use for 500g of flour? Grazie
Good to see you smiling and laughing again Vito😊😊
But which one is healthier?
