Chargrilled Pork Chop Sandwich
This recipe is great for the hot summer months. I start with extra thick boneless pork chops cut from the center section of a pork loin roast. You want the chops about 2” thick to start. Butterfly each chop with a sharp knife taking care not to cut the chop all the way in half. Press the butterflied chop out flat on a cutting board and hit it with a jacquard meat tenderizer.
Next take a gallon size zip top bag and split each side down the seam. Place the bag on the cutting board and lay the chop in the bag. Use a meat mallet or heavy rolling pin to pound the chop out flat. It should be about a 1/4” at this point.
Fire up a charcoal grill and when the coals are good and hot pour them to one side to create a two zone cooking environment. Place the cooking grate over the coals and allow the grill to come up to 450-500 degrees.
Season each chop with a good dose of Killer Hogs The BBQ Rub followed by a light coat of Killer Hogs Steak Rub for texture. You can substitute your favorite bbq seasoning here if you wish.
Place the chops over the hot zone of the grill and cook for 1 1/2 - 2 minutes before flipping. The goal here is to sear/char the thin chops without over cooking them. After flipping start basting each chop with The BBQ Sauce. Continue to flip and baste each side every couple of minutes until both sides are char grilled and sticky. If the grill gets too hot you have the cool side to move the chops to slow it down. It should take about 8 total minutes to on the grill.
Once the chops are ready remove them from the grill and rest for 5-7 minutes. Break out the cast iron skillet and grill some vidalia sweet onion - sliced super thin - with 2 Tablespoons of butter and a pinch of Steak Rub. Grill the onions for about 5 minutes or until they’re soft. Slide the iron skillet over to the cool side and grill the buns for 30 seconds - 1 minute right over the hot coals. Then it’s time to build the Char Grilled Chop Sandwich.
Lay the bottom bun on the cutting board or plate. Layer thinly sliced dill pickle chips on the bottom bun. Place one of the char grilled chops over the pickles and I like to add a good extra drizzle of The BBQ Sauce so it gets real messy! Pile up some of the grilled onions on top of the chop followed by a few crispy jalapeño chips for some crunch and added heat. Place the top bun over all of it and dig in! This is one Summer Sandwich I can get down on!!
Ingredients:
- 4 Thick Cut, Boneless Pork Chops
- 1/4 Cup Killer Hogs The BBQ Rub
- 2 Tablespoons Killer Hogs Steak Rub
- 8oz Killer Hogs The BBQ Sauce
- 1 Vidalia Sweet Onion thinly sliced
- 2 Tablespoons Butter
- 4 jumbo size buns
- dill pickle chips
- crispy jalapeños
Directions:
1. Butterfly each chop and tenderize with a jacquard meat tenderizer. Place each chop in a plastic zip top bag and pound out to 1/4” thickness using a meat mallet.
2. Prepare charcoal grill for two zone fire (hot and cool side).
3. Season each chop with The BBQ Rub on all sides. Lightly season with a coat of Steak Rub on both sides. Rest the chops for 20 minutes until the grill is ready to cook.
4. Place each chop over the hot side of the grill (directly over coals) and grill for 1 1/2 - 2 minutes each side. Flip each chop, baste with The BBQ Sauce and continue to grill flipping and basting with sauce until the chops are done about 8 minutes total time. (move the chops to the cool zone if the fire gets too hot, this will prevent burning)
5. Rest the chops for 5-7 minutes, meanwhile place a cast iron skillet over the hot side of the grill. Add 2 Tablespoons of butter and the onions. Season with a pinch of Steak Rub and grill until softened about 5 minutes. Also place the buns over the hot side of the grill and toast for 30 seconds or until brown.
6. To assemble the sandwich: layer dill pickle chips on the bottom half of the bun. Place a char grilled chop over the pickles and drizzle with extra bbq sauce. Add grilled onions and a few crispy jalapeños then the top bun.

Love how he has his own brand of rubs but tells you to use any you like and doesnt use it to advertise his stuff
They are great rubs though. I use them weekly.
Cause that is Independent marketing, showing off your product but not disowning the competition
Every one of these videos is an advertisement for his products.
I came here to say that. Yeah he's showing that he uses his own stuff but he's not hawking it.
mindlesswaffle exactly. And even if he is trying to sell product here, this is a good place to do it. I found this channel one day while looking for a good rib recipe. I loved the way he cooked and explained things. I ended up buying a single shaker of his rub from a local store and loved it. So I bought a massive sampler pack from his site after that. Needless to say my friends and family are very happy about that decision with all the cooking I’m doing now.
Thank you Malcom
You guys hit over 1 MILLION subscribers!! That’s long overdue. You two are the best in the business and you deserve everything you get! 🤟🏼
Agreed
Agreed. That should be celebrated with something
UA-cam, would have sent him a gold plaque with a “Play Arrow” engraved along with his UA-cam channel name on it and a letter congratulating you on a million subs - at least that is what I got when my channel got my first million back in 2016. “ Taste the Rainbow” is not my channel name - I just use this name when I am surfing around watching other videos.
He is having the best lockdown. I am at home, eating boiled rice and curd.
😭😭😭oh man, keep on surviving
Advit Tripathi I know the struggle, man. 😂🤣😂😂
I'd like a big slice of provolone on it
What are you living in the 1700s who eats rice and curd like little miss muffet???
That just sounds sad 😥
I am so proud of Malcom’s accomplishments. He’s always done a great job with his videos and never try’s to oversell his products. His soft sale approach is hopefully making him a lot of well deserved money. Often when I go to order his products, he’s out of stock on many of his items, so sales must be good. I am definitely a big fan and a customer.
congratz on 1 million subs mr. reed
He said, "I gotta get back down on the rest of this one". That country boy lingo! 😁
Not to mention when he goes to wipe his face "I gotta do some house keeping on that." lol

Congratulations on a million subscribers guys!
Malcom is THE MAN! I have become a much better BBQ'er because of Malcom. Thank you!
Hi Malcolm! I tried this recipe last night and the family absolutely loved it. I have on hand your rubs and bbq sauce, so it was an accurate cook to what you prepared in the video (we skipped the crispy jalapenos). I do not have a Jacard meat tenderizer so instead, I used two forks and accent meat tenderizer and that worked out well. As always, thanks for your great videos and recipes.
This might sound crazy, but that GI Joe video about Porkchop Sandwiches brought me here! This makes me wanna try these delicious "steamed hams".
Malcolm, God sure to bless you with a gift
I can't express how much I love this channel. The recipes are great and I have learned so many grilling tips and tricks. Thank you Malcolm!

@@jonjohnson102 they're ain't no tellin' what's in that McRib. It's only around 2 months a year. Figured out why. It takes 10 months to find and shoot what ever kind of meat that is in the McRib.
That is the best looking pork sandwich I've ever seen, I wish this guy was my neighbor. I would fully fund every meal as long as he agrees to cook.

Thanks for providing me what to make tonight for supper, I hope our friends love it!
Awesome job Malcom keep up the great work
Yeah...... I’m making this on the weekend for sure!!
Congrats on 1M subs ya'll! I don't know how in the world you come up with these killer concoctions! And then you lay it out like a college professor teaching a top level cooking course. No fluff, no unnecessary anything, just boom, boom, boom: TA-DA!! My boneless chops always tend to dry out, now I know why. I'm off to the store!
I’ve made this three times now.
Solid “10” ever time.
I have 7 kids, 2 suitors and 2 parents and the opinion is universal - “As good or better than anything I’ve ever eaten.”
FYI - I don’t butterfly. I just cut off about a 1/2” chop and use a tortilla press to flatten out the meat.
This is art
Glad to see you back! This looked so good!
The godfather of BBQ.
Always love the videos!!!!!!
His expressions when he taste his cooking is epic!!!😂😂
I've had good luck with Malcom's recipes in the past and am trying this one today. Thanks Malcom and keep up the good work.

Fantastic new way! Thanx M!

THIS man Cooks.
This is one of my new favorite channels.
Holy mother of GoD is this a homemade McRib sandwich I’m so doing this on the weekend
Just made it, it's deadly, threw some bacon mayo on it.
Making this Sunday..yum
Congrats on 1 million!
that sandwich is money. Love your channel love your recipes.
Made these the other day. Substituted the onions for coleslaw. And switched to toasted ciabatta buns. I think they hold up to a saucy sandwich a bit better. Was a bit of work pounding out the pork loin but it was well worth how tender it came out. The crispy fried jalapenos really work well with this sandwich.
Malcom. Thank you for your videos and your products. Since watching your videos over the last few months you have inspired me to try to BBQ as a side job and hopefully move into full time.
LOVE the 60fps malcom
Congrats on reaching a million!
My family and friends love my cooking thanks to you. I do a similar sandwich but will be adding this one to the menu for sure.
You make my mouth water while I'm cooking lmao, I love this
Man as usual above and beyond great sandwich

This is getting done soon. Thanks for sharing.
@Malcom Reed I tried this sandwich today and it was amazing! I went and bought a Weber Kettle just to make it. Unfortunately I had to substitute for a different rub and sauce because Ace was out of all of your products but I plan on trying it again once your stuff is available again. Keep up the great work!
I love this guy 👍🏽
I made this over the weekend and it was awesome thanks.
Best pro-tip ever: just use the back of the tongs!
That’s what I said. You’re a champion too!! Lol 😂
