  • Power Porridge with Goji Berries
    - The power comes from the amaranth, teff and Goji berries which are all super foods with amazing nutritional profiles. Amaranth has high quality protein and is also rich in minerals. Teff has plentiful amounts of iron and calcium, while goji berries are a great source of antioxidants and phytonutrients.
    2/3 cups of rolled oats (gluten free)
    8 pitted dates, chopped
    1 Tablespoon Amaranth
    1 Tablespoon Teff
    2 Tablespoons Goji berries
    1 teaspoon cinnamon
    Pinch of sea salt
    1 1/2 cups of water
    Combine all the ingredients in a saucepan over medium heat. Bring to a boil, lower the heat, cover and simmer for 10 minutes, until the amaranth is tender and the porridge begins to thicken.
    Bree and I always ate this porridge just like this yet if you want you can add some maple syrup and a plant milk.
    Teff - is an abundant source of calcium, iron and fiber. There is not need to rinse Teff as it is just too small and has passed through a series of screens after being harvested. Teff is an ideal non-dairy source of calcium, as one cup of cooked Teff contains 387 milligrams of calcium. Two ounces of Teff and an extra large egg , both have 7 grams of protein. Teff is a good source of niacin, thiamin, riboflavin, zinc, magnesium, copper, manganese, boron and phosphorous.
    Millet and Teff with Squash and Onions
    1 butternut squash, cubed
    I onion or leek, diced or sliced
    1 cup millet, rinsed
    1/2 cup Teff grain
    4 1/2 cups water
    1/2 teaspoon sea salt
    Combine millet, squash, onion, Teff, water and sea salt in saucepan. Bring to boil, then lower the heat and simmer for 30 minutes
    Amaranth - can be used to help fulfill protein and calcium requirements. It has protein complexes that are more than adequate for most individuals and amaranth is also unusually high in lysine, and amino acid that is low in most other grains. A combination of amaranth and a low-lysine grain then presents a very high amino-acid/protein profile, even higher than found in meats and other animal products. It is high in protein (15 - 18%), fiber, amino acids, vitamin C, and calcium. It contains more calcium and the supporting calcium co-factors - magnesium and silicon than milk.
    In areas of Africa and Latin America where amaranth is consumed, there exists no malnutrition.
    Amaranth and Millet
    1 1/2 cup Millet
    1/2 cup Amaranth, rinsed in very fine sieve
    1 onion, diced small
    3 stalks of celery, minced
    1/2 medium sized winter squash - cubed
    5 cups of water
    1/2 teaspoon sea salt
    Combine everything in a pot and bring to a boil. Lower heat and simmer for 30 minutes.
    Please try Kasha ( Buckwheat) too
    Kasha cleans and strengthens the intestines and improves appetite. It is one of the few alkalizing grains. Rutin, a bioflavonoid found in buckwheat, strengthens capillaries and blood vessels, inhibits hemorrhages, reduces blood pressure, and increases circulation to the hands and feet. Rutin is also an antidote against x-rays and other forms of radiation.
    Kasha and Teff
    1 cup kasha, rinsed
    1/2 cup brown or ivory Teff
    1/2 teaspoon sea salt
    4 cups of water
    1 small turnip, diced
    1 small sweet potato, diced
    1 onion, diced
    Italian Parsley as garnish
    Boil water and cook the turnip, sweet potato and onion for about 10 minutes. Add the kasha and Teff and cook for 20 minutes covered on low heat. Garnish with minced Italian Parsley ( 1 bunch) and enjoy.
    Deluxe Morning Breakfast
    1/2 cup Teff
    1 cup rolled oats (gluten free)
    4 1/2 cups water
    1/2 cup dried fruits (dates, apricots and figs)
    1/2 teaspoon sea salt.
    1 teaspoon cinnamon
    1 teaspoon vanilla
    Put the Teff, Oatmeal, fried fruit , water and sea salt in a pot and bring to boil then lower to simmer for 20 minutes. Add cinnamon and vanilla.
    Can be eaten with maple syrup and plant milk.
    Note: when buying dried apricots, do not use the orange ones as they have been treated, use only the dark colored ones.

    I love all of your videos. We are not a plant based family. But I am definitely cutting down and enjoying a lot more vegetarian curries, and Mediterranean type meals. A bit baby steps at the moment but I'm definitely trying
