Jamaican Coconut Drops 🇯🇲

- This coconut treat is a Caribbean favorite, but goes by different names, absolutely delicious!
Ingredients
1-2 coconut 🥥 or 3-4 cups cut into small pieces
2 cups brown sugar
2-3 tbsp grated ginger
2 tsp grated nutmeg
1-2 tsp cinnamon powder
1 tbsp vanilla essence
1/2 tsp salt
2 cinnamon leaves or stick
3-4 cups water
Cook for 30-35 minutes or until reach a thick syrup consistency, as shown in the video.

Looks yummy Raquel. As you may know its called Coconut Sugar Cake in Trinidad and Tobago, only your version has more spices. I will try it. My hubby loves anything coconut.

Love anything coconut myself. We call this coconut sugar cakes in guyana, we grate the coconut tho. This came out fantastic would love to taste it. ❤
When the coconut is grated it called grater cake in Jamaica lol
Because these were “drop” to form, that’s how the name was derived 😂

I forgot it's name in DR, but I do remember Jalao de Coco which is very similar to it and sold next to it. And heck yeah, don't let that roasted coconut water spill, it taste sweeter than the green coconut.😋

Parchment paper, baking tray, any clean surface actually… I use the banana leaf because that’s how my grand parents had done it
@Racsfood yes that's how I saw my grandma do it too but I live in Connecticut there is no banana tree here and at present it's just snowing
