Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!

Wednesdays with Kent is like bread day at Grandma’s house, the goodness of fresh home cookin with the smells to drive your senses insane and set your mouth to waterin with anticipation. I swear the smell of Kent’s cookin just floats on that Oklahoma breeze right up the road to my house! I do think I wanna smother that chicken with some white gravy too. Mmmm Mmmmm Great!
I wouldn't mix the gravy in with the syrup. A good idea is do syrup on one half and gravy on the other half. There was a diner I used to go to that served CnW just like Kent's but not as good due to the thickness and size of Kent's chicken and true southern techniques. I always ordered it dry with syrup and gravy on the side. I would do the half and half thing and both sides were great.

Tony Hulman bought the Indianapolis motor speedway after WW2.it was in a state of neglect & disrepair. But he brought back. God bless you both..and beagle too..

Looks real good, didn't think I would do this, but after watching I will. I like your cooking area. Outside cooking on the range is wonderful. What flour on the table, just a brush off the table and we are clean. What grease splatter on the cook top, just leave the heat on because this one is self cleaning!
I like to cook in lard too. My grandmother Rose, GOD rest her soul, used to save her bacon and sausage grease and fry her chicken in that. OH MY IT WAS GOOD!

It's the only times i eat the whole wing with drummie & flapper attached. If i eat just wing, i like the drummie & flat separated. God bless you & yours & Shannon, our vets, viewers & the pups, everybody please stay safe. btw folks, the waffles & chix are best with real maple syrup( a lil' more costly) than those pancake syrups, but huge difference in flavor, worth the money.

I made the shrimp poor boys on Saturday night and the chicken and waffles on Sunday. Awesome! Added corn fritters and dipped them in the extra chipotle chille in Adobo sauce from the poor boys. Fantastic. Thanks Kent and Shanon for the recipes and the wholesome goodness you show to all.

We serve this at our restaurant. I like to pound out the chicken breast until its a bit thin so the breast meat and crispy bread coating go together with the perfect crunch every bite. We also serve it with regular syrup or house made sriracha maple syrup. Its literally the best thing ever

Hi Kent....bought your first cookbook, quite a while back and really like it. On this Chicken & Waffles recipe....it's also really good. Here's an additional tip, if I might offer. In the "wet" buttermilk mixture...try also adding about 3/8 cup of dill pickle brine, and 1-Tblsp of Hot Sauce to the wet mixture. Let that chicken marinate in that mixture for minimum 2 hours, to 4 hours, rather than 5 minutes. Hope to see you in Greenville SC, later in the year.

Looks delicious. When I make chikin & waffles I heat up some good maple syrup with a healthy dose of sriracha sauce , goes good with the crunch.
