  • Strawberry and rhubarb turnovers are a delightful alternative to traditional pies, offering a portable and individual-sized treat. These turnovers combine the sweet, juicy flavour of strawberries with the tartness of rhubarb encased in a flaky, buttery pastry. The process typically involves chopping fresh strawberries and rhubarb, then cooking them slightly with sugar (and sometimes a bit of lemon juice or zest) to create a thick, jam-like filling. This mixture is then spooned onto dough circles or squares, which are folded over and sealed. Brushed with egg white and a dusting of caster sugar.
    Baking the turnovers produces a golden, crispy exterior with a warm, aromatic filling. They're often enjoyed as desserts or sweet snacks and can be served either warm or at room temperature. Optionally, they can be dusted with powdered sugar, glazed, or served with a scoop of ice cream or a dollop of whipped cream for extra indulgence.

    Ingredients: the filling makes 7-8 turnovers
    Ready-made puff pastry
    3 cups (300g) Rhubarb sliced
    3 cups (360g) Strawberries halved
    1 ¼ cups sugar (220g)
    ¼ cup cornflour/cornstarch (40g) Editing error see note:
    ½ tsp cinnamon
    ¼ tsp salt
    1 tbsp lemon juice
    Egg white for the wash
    Sprinkle sugar
    NOTE: Cornflour/cornstarch was added when all the fluid was released while cooking. You can see it was added before stirring at 05:02. Sorry for the editing error!

    They look very yummy. I actually made a Rhubarb crumble yesterday ,I roasted the rhubarb in 3 inch chunks for 15 mins in a heather honey & ginger mix ,I removed the ginger pieces once roasted . It added a nice tickle of flavour to the rhubarb.
    Simply delicious....😋

    My mother grew rhubarb and mint in her small garden!
    My father's garden was behind the shed, and he grew lettuce, tomatoes, and carrots, and I know at the second garden, because they sold their house, started to grow grapes!
    I miss them! Lost them both when I was 24!
    But I have the best memories!🥰

    My Mom used to make strawberry rhubarb pie. We had strawberries and rhubarb growing in our backyard. She served it with real whipped cream! There was no Cool Whip back then. It was delicious .     I usually save all my rhubarb for wine, preferring apples or raspberries for this sort of thing. I was never a big fan of strawberry rhubarb pie, scones etc. This looks so good now I have to make it...thanks Rik.

      It is hot - its ridiculous every day has been above 41 degrees - bloody hot in the kitchen. There will be a cracker tomorrow mate you may be interested - I'm cheating a little to make it easy! Rhubarb in Makro and Go Wholesale down here. All Aussie stuff loads of it. Not cheap - I get it when its reduced. You know and I know - stick it in the fridge it still lasts for a couple of weeks.     Recently had strawberry rhubarb for the first time myself. Rhubarb doesn’t grow down south (United States) where I’m from. Very tasty. But our strawberries are ripening right now, and I think I will get some puff pastry and be ready make a super fresh turnover! Thank you, Rik!

    I prefer my rhubarb straight. Just made the first batch of rhubarb jam and a pie. Made a rhubarb strawberry crisp once. Husband very carefully pulled out all the rhubarb! He won't touch it.

      You piqued my curiosity Carol and so after a search I'm pretty sure you'll be able to buy it frozen. There seem to be a couple of frozen food suppliers doing it. La Chaine for instance.
      A useful tip for expats is that your Amazon log in works world wide and you'll find a lot of things can be delivered from the UK and sometimes cheaper than bought locally (tinned rhubarb maybe?). Also from the USA too and some things are spectacularly cheaper from the USA. It can be worth checking round and you'd be surprised the savings even taking into account delivery charges, and time from Germany or Holland is often quicker than locally.

    These look superb, Rik. I make something similar but use ginger powder instead of cinnamon and also add a table spoon of milk/white chocolate drops to cold filling before baking 😋 If you're having something naughty, make sure it's properly naughty 😆

    Rhubarb and strawberries go perfekt together, great in pastries or in the oven as crumble 😋 or with ice cream. If you can’t get nice strawberries just take some strawberry jam instead.

    Love rhubarb grew up in Oregon where it was everywhere but hard to find in the stores here in Texas. Last time I saw it here the price was 12.99 a lb. Is it easy to find in Thailand? Looks good you got my mouth water 😊

    Ah come on.😘 Your amazing my friend.. We have a wedding to go to in 6 weeks time. I dare not put on any more weight..If I cannot fit into my outfit,,,I suppose I can always ask you to subscribe ,,to a hired one .😘😘😘

      Rik does terrible things to people on a diet; I am one for sure. Great food and so easy to make.
