    Try marinating the chicken in some buttermilk and a little hot sauce in a large container in the fridge for at least 8 hours like we do here in the South before frying it.

    Actually the chicken bones can go dark because the chicken is young, so the bones haven’t calcified properly. The colour comes from the bone marrow, which seeps out of the bone and turns dark when you cook it. Nothing to do with blood :)

      You do know that Collard Greens was in fact introduced to America in the 1600's by Africans right? That Non-Hispanic White and Non-Hispanic Black people are both tied in terms of heart disease? The U.S. have been adding poor quality shit to everything and calling it their own since they came to the continent. The fact that you said that adding things into other things doesn't make it different is kind of ignorant as that's what making new food is, unless by your definition every pork dish is still pork and that whoever made said dish stole it from Pork Porkinson.

    Next time you make southern foods you gotta make mashed potatoes and gravy, buttermilk biscuits, sweet tea, fried okra, baked yams (my grandma makes a recipe of baked yams with marshmallows on top 😍 omg,) green beans (flavored with bacon 😍,) and the best part of southern food...our bbq. And if you're being specific like South Carolina, pulled pork with a mustard based bbq sauce (aka South Carolina BBQ or "Carolina Gold" sauce.) It's so delicious 🤤 also a lot of people I know who do pulled pork take out as much fat as possible, but I prefer some of the fat for flavoring. So, that part really depends on what you prefer.

    The pork neck in NZ ,we put in a boil up 😍😍😍 Kumara (sweet potato), potatoes, watercress or Puha, Doughboys, salt & pepper all in a big pot left to simmer for 2-3hrs on medium and Fry bread,you have to have fry bread 😍😍

    Try making some Scotch Eggs.
    My trick is boil the eggs by getting them started in a pot of deep water, but then kill the heat and let them sit in the water for some time. It'll cook them but they'll be less solid inside without being runny or under cooked.
    Then for 6 eggs use about a 1b of sausage. Roll the shelled eggs in flour. It makes it much easier to get the sausage to cling to the egg. Then cover the egg in sausage... and I use just standard breakfast sausage.
    Then roll the sausage/egg ball in flour once more (makes the egg stick better), then coat in egg, then roll around in a mixture of panko and spices to taste. I tend to just throw in some black and a touch of cayenne pepper for some heat.
    Normally'll bake it for about 20 min at 375, but you can also fry these little nuggests of goodness....

    I love soul food and/or southern cooking! You need sweet potato pie or banana pudding for dessert! It looks real good! Anyways, there’s a Vietnamese chain restaurant in Hawaii called Bale and my favorite banh mi is their tofu. None of the Vietnamese restaurants offer that here in Maryland, can you make it? Also they have this taro tapioca pudding (sorry,I don’t know the name of the dessert in Vietnamese!) but it’s sooo good! Oh and can you make Vietnamese pork chops too? ❤️❤️❤️

    OMgosh, I love pork neck bones, I cooked a pot of them last week, I do rinse mine good and cook on top stove for 2 -2 1/2hrs season good,till tender then I put sauerkraut and wide noodles in pot cook another 15-20 mins,..soooo good,.some times I put potatoes and kraut..I'm a country gal from Missouri and love too cook,..and also love using my pressure cooker ,instant pot is same thing,..and love using my air fryer too,..this gal has learned a few things from ur cooking videos,.take care and keep on making ur cooking videos love them,.

    We cook with EVOO here in the States, A LOT. I cook with it every day when I do cook. We just do not deep fry with it. We use Peanut, Vegetable or Canola Oil. Also, what do you have there for Hot sauces and Cajun Spices? I want to make a cooking care kit for you and send it to you, KT! I love all of your videos!!!     Try turkey necks for the greens one day its yummy!! Make this one day, black eyed peas with a side of southern cha cha to go with it, yams, fried lamb chops, and homemade corn muffins! Also salmon patties with biscuits and syrup another time too! I’ll give you the recipe if you need them☺️

    Tip: for true southern greens...
    Add 1 or 2 smoked pork tails(adds way more flavor)
    Add a dollop of bacon grease(all southern cooks keep this on hand)
    Lastly, add a teaspoon or so of sugar(this curbs the vinegar and bitter of the greens, optional but my preference.)
    I learned from the BEST!...BB&B mommas! ❤
