I went to this little breakfast/lunch place in Cape May NJ, and saw a version of this on the menu. I saw a lot of customers had it on their table, I found out it was one of their specialties so I ordered it myself. I did the same thing 4 days in a row, It was the best French toast or breakfast I ever had. That was a year ago, now I gotta give your's a try.
