Hi Zindy, Cendol/Banh Lot is fairly straightforward to make. Are you familiar with the recipe? To make it chewier, use all-tapioca starch instead of tapioca and rice flour.

Hi Sara, the shredded coconut I use isn't frozen but dried. Either a fine or thicker shred would work. Grated coconut, which is typically finer, would work too. Good Luck!
