Ive been cooking this since watching Rick in Sicily (Corleone)...Great dish,so simple,,i add a "glug" of red wine.... shiraz.....it's also good for nxt morning...hangover... Cheerz.

I've been making this for my family and friends for years since watching Rick's travel series through the Mediterranean and northern Africa. I've cooked many wonderful recipes from those series. The tagine dishes are one of my family's favs too!

how much salt is there in this dish ? salt the aubergines, cook with some salt, salt the garlic, add tomatoes, add aubergines, add some salt, and then add feta which is quite a salty cheese. Is this for real ?

Sorry! But my girlfriend is Sicilian and she is in shock! You use passata not tinned tomatoes, no chilli, garlic goes in whole then taken out after and you wouldn't use feta if someone put a gun to your head, not even that other cheese mentioned, ricotta salata no negotiation. This is why Italians think us English are a bunch of animals. To us it makes no difference to them it's life!
And macaroni not spaghetti, right?
Only the mafia would hold a gun to our head not middle class people only the rough class.
No silly Sicilian woman can advise Rick Stein how to cook he is world class not someone living hand to mouth in multi storey flat in Sicily.
