Seeing time frame and other plans. I was first looking at WSM and split smoking (resting in cooler overnight). But using the Dutch oven surely makes life easier. A my son already did a hay-chicken on his own at the age of 8. I can now fully trust him to cook the beef ribs.
And no, you're not alone in your opinion on fall-of-the-bone ribs. Apart from texture I just hate it when it just squashes into a mess while trying to cut. Just too messy for me. Sonó, no wrapping for some time now. My favourite ribs are simple seasoned hanging Iberico ribs. Caramelised with different sauces (preferred to tastes), on higher heat indirect wood fire.
