Regina is my favorite character and there is no doubt that she love Henry, but I do understand why Henry acted the way he did towards her. She is the "villian" of his storybook and not only that, she basically was making him think he was crazy for believing in something that was actually true, making him see a therapist and everything.
Emma would actually be incorrect, because everyone's happy ending would be taken away. Just like Jefferson, or hansel and gretel parents and children were separated. Regina would never allow Snow to keep her child in the new world or she would have left her pregnant forever jist like cinderella, since time was frozen.
With that said; I can't blame her for how she feels. You have to remember that she was in and out of the foster system and like she said she was alone.
Season 1 has a very different feel from the majority of the show. Many people rank S1 as their favorite season ever, but honestly I like parts of S2 even better. I hope you enjoy it!
I love Season 2 so much better than season 1. It has so much better character moments, certain people become much more likable or unlikable, you meet some new interesting characters and villains, and the emotional moments feel so much stronger! Excited for your next reaction!!
Honestly I dont think Emma understands the curse truly. If Snow and Charming had kept her with them, they wouldnt be together. The whole point of the curse is to steal everyone's happily ever after...Snow White's in particular since getting revenge on her was the whole point of the curse. There is no way in hell The Evil Queen would have allowed Emma to be with her parents. If the EQ didnt let The Mad Hatter be with his daughter and she separated Hansel and Gretel from their dad when none of those people did anything bad to her, there is no way she would allow Snow to keep her child. I love Regina's character but this curse was her being a petty, evil, vindictive person trying to hurt not only Snow but many others who did nothing wrong. And I think Henry is right to treat her as he does because he knows that she's doing these shitty things to a town full of people that he cares about while actively gaslighting him and trying to convince him that he's crazy when she knows he's not. I think Regina loves him, but its not True Love in the sense of the show's lore. But still she is definitely one of the most fun characters to watch after Gold/Rumple.
Henry does do Regina really dirty. Haven't seen the show in years, but I did always believe that. Henry was highkey the only person Regina loved for a while and for him to just do her like that although she's never been a bad mother to him gets me every time.

There are lots of new characters that will be introduced (some permanent, some not) this season This season is good but season 3 is the best season as it has the best villains and story twists you wont see coming one bit. I don't think you understand how true loves kiss works. If Regina had kissed Henry back in the last episode it wouldn't have worked anyway because Henry didn't love Regina even though she loved him plus Emma is the savior and only she can break the curse. Also anyone with magic can use the hat and the reason why Regina couldn't use the hat and needed Jefferson's help was because he knew how the hat worked. I don't know if you noticed but the purple haze was magic being brought to storybrooke that's why Regina has her magic back and is able to use the hat

Henry and Emma are coming from a pure and unselfish place in their feelings for each other at this point. Henry loves Regina, but he has a lot of other feelings(fear, anger, disappointment, hurt) mixed up in that essentially tainting it. Regina meanwhile does love Henry, but at this stage she is still coming from a very selfish place and that also taints it. More importantly Regina had not earned the moment from a storytelling perspective at this point. She has been horrible to everyone including the one living person she loves. That doesn't earn you a hero moment like true love's kiss. Emma and Henry on the other hand have been putting in the work to earn a hero moment. Trying to do their best by everyone. Maybe not always succeeding but trying. Emma literally is giving up Henry to Regina for his own good right now. Regina is poisoning the other mother that Henry loves with no care as to how that would affect him.

I’m pretty sure the hat is a plot hole in this episode. No explanation for it, other than Sebastian Stan’s career was taking off around then and maybe they couldn’t get him for this episode. Snow and Charming’s one night stand bit is one of my favorite moments of the show. Glad you loved it as well.
Sebastian Stan was busy filming Captain America The First Avenger so he could not return for this episode. My guess is that they wrote the scene with him in mind but when he couldn't return they had to change it quickly and they ended up creating a plot hole.

First, Regina summoned him because he's the only one who KNOWS how to use it, not the only one who can use it. The proof that everyone can use it appears when Regina uses it to obtain the apple. The scene shows explicitly that Regina was using it while Jefferson is only giving her instructions of how to use it.
