I bet you could make a fall riff on a Mai Tai with the acid adjusted apple cider. Swap out the orange curacao for apple brandy or allspice dram and maybe cinnamon syrup for the rich simple syrup. I guess I know what I'll be trying this weekend
Both sound fantastic. Having several orchard within a few minutes drive getting local pressed apple juice is quick and delicious. Will be trying these very soon.
Derek your channel is awesome. Been watching your videos for a little over a year and now have over 20 bottles of rum lol. I used the honeycrisp cider from Trader Joe’s for the syrup. Came out perfect. I was thinking of making a apple cider daiquiri with it. I usually go 2 oz, 3/4 oz, 3/4 oz. Think for this I should dial back the simple syrup a to 1/2 oz maybe less with the cider syrup having a bit sweetness? 🤙🏼
Thanks, Mark! Hard to say about the right proportion when replacing syrup in some thing as simple as a Daiquiri because the acidity of your new syrup has to be taken into account. I'd guess you could potentially not use a simple syrup at all and just use the apple cider syrup + rum. I think the only way to figure it out is to test it. I never brix tested it but assume the apple cider syrup is sweeter than a 1:1 syrup
Definitely making these! How did you up the intensity on your cinnamon syrup? I generally let mine sit overnight before straining out the cinnamon sticks, but curious what you did.
I broke up the Cassia cinnamon in smaller pieces and used about 50% more than I normally would have, after simmering I let it sit for 6 ish hours. The cassia cinnamon + extra amount used extremely intesified the syrup, and cassia is more intense than other cinnamons. It was borderline too much and I'll probably dilute it with more 2:1 simple
I don’t have a video and even my recipe was even riffing off the Tropical Standard. But if it’s too intense you can cut it with a plain simple or 2:1 simple, which I plan on doing to mine.
