I think your way of making the fathead dough, blending the mozzarella and almond flour together before melting, makes mixing the dough look easier than any other method I've ever seen. When I started to have difficulties with my fingers due to my spinal injury, I found using different-sized dowels to help where my poking fingers needed to be used. And 1 to 1 1/2" dowel, cut down of course, and sand the bottom to round the harsh edge works wonderfully! I rub my dowels down with butcher block conditioning oil to preserve them.
the handle end of our muddler tool is perfectly rounded for tamping down mini muffin size recipes (i learned that with cookie cups from All Day I Dream About Food)
They make little tampers or presses just for dough in mini muffin pans. I've used one for making tiny pecan tassies but not sure what it's called. Great video, thanks Steve!

I have a breville coffee machine. Using the back of the tamper that came with it works depending how big your muffin tray is. Alternatively you could blind bake initially to keep the shape.

Hi Steve, I appreciate the recipe! Just a comment on mozzarella shredded cheese. I am on a journey to take all seed oils out of my diet. Kirkland preshredded mozzarella contains canola oil. I now use my presto salad shredder and 6 sticks of Frigo string cheese to make a cup of shredded cheese. Quick and easy. It shreds it a bit finer and probably could forgo the food processor step. Just an idea for others also trying to remove seed oils. Thank you again for this recipe.
So I’m not real good researcher. Just read the back of the bag. Then I googled ingredient list and it came up. Same with Frigo mozzarella sticks. Fewer ingredients, only shred what I need. Probably not as cost effective.

Hey, Steve. A Teflon polymer clay roller would probably be perfect. Rounded end like a mini bakery rolling pin. There's also Teflon or plastic carving tools if you want a smaller end. Something like ball tools for mandalla or thin metal art. Looks delicious. 💜💜

Yum! You had me at PIZZA! I don't know if you do any canning but if you have one of those magnetic lid-picker-uppers, you can cover the magnetic end with foil or stretch wrap and that fits nicely into the mini muffin tins.
I'll be doing experiments with some other versions of Fathead dough in the future. I think hemp hearts might work as a substitute for the almond flour.
I have a 1970's table top convection oven with the single heating element & fan in the top center of the unit. What I do to make sure my food cooks evenly is cover the top of my cooking pan with a larger alumium foil pan. Remove the cover pan to brown.

I thought about that, so clearly great minds thing alike. The problem is getting a good angle, plus there's a pin that the scoop pivots on that sticks out. I feel like a test tube would work well, but I don't have any of those. 😉
I use a plastic hot sauce bottle like Kinders to perfectly flatten out muffin sized bottoms. I make key lime torts and cheesecake bottoms that way as well. A place like TJ Max will have every possible size hot sauce bottle on the planet.
Man, these look good. I was planning on making pizza this weekend, so I already have all the ingredients for these. Might have to alter my plan. If you have some way to make a much bigger pocket, I'd love to know -- I'm pining for panzarotti (fried) and calzone (baked), and my buddy made a meat-lovers pizza dip the other day that tasted just like panzarotti filling.
Thanks for the ingredient measurements in grams - people who are serious about cooking prefer the mass instead of volume. On a side note, some recipes with almond four work with pork panko instead, I think I'll give that a try on the second batch I make (no changes the first time you do a recipe!)

this looks really good, Steve, and we're going to try them today! But if I cook them in the Anova, where should I have the heat selected? rear? top? both?
@@beccaprice7108 the issue with the Anova and its bottom burner is that it heats up VERY slowly and has poor thermal retention. I wound up preheating the oven with convection, then put the muffin tray in. Once it got back up to 350, I switched to the bottom heating element. Honestly, a standard oven works better for this because of the Anova’s weak lower heating element.
Normally, I use Rao’s arrabiata sauce, but was all out. This brand is Frank G’s Hole in the Wall. It has a similarly low carb count, and the amount I used per cup resulted in around 2/10ths of a gram of total carbs.
Would a pestle work for the "well" you are wanting? You might be able to tamp down a couple places with slightly moving it around. I was trying to think of what you might already have.

Use the other end of a wooden spoon or a regular metal but it will warm up from your cups.

I love fathead dough! I’ll have to make these for New Year’s.
I use a plastic hot sauce bottle like Kinders to perfectly flatten out muffin sized bottoms. I make key lime torts and cheesecake bottoms that way as well. A place like TJ Max will have every possible size hot sauce bottle on the planet.

Man, these look good. I was planning on making pizza this weekend, so I already have all the ingredients for these. Might have to alter my plan.
If you have some way to make a much bigger pocket, I'd love to know -- I'm pining for panzarotti (fried) and calzone (baked), and my buddy made a meat-lovers pizza dip the other day that tasted just like panzarotti filling.

Thanks for the ingredient measurements in grams - people who are serious about cooking prefer the mass instead of volume. On a side note, some recipes with almond four work with pork panko instead, I think I'll give that a try on the second batch I make (no changes the first time you do a recipe!)
With each recipe, I'm getting closer and closer to not having to ask Alexa to convert imperial to metric for me. 😉

this looks really good, Steve, and we're going to try them today! But if I cook them in the Anova, where should I have the heat selected? rear? top? both?
@@beccaprice7108 the issue with the Anova and its bottom burner is that it heats up VERY slowly and has poor thermal retention. I wound up preheating the oven with convection, then put the muffin tray in. Once it got back up to 350, I switched to the bottom heating element. Honestly, a standard oven works better for this because of the Anova’s weak lower heating element.

Normally, I use Rao’s arrabiata sauce, but was all out. This brand is Frank G’s Hole in the Wall. It has a similarly low carb count, and the amount I used per cup resulted in around 2/10ths of a gram of total carbs.

Would a pestle work for the "well" you are wanting? You might be able to tamp down a couple places with slightly moving it around. I was trying to think of what you might already have.

You should get a pastry/tart tamper. They come in different sizes.
