- Louisiana crawfish are served in Berlin restaurants. The crustaceans also known as American swamp crayfish - originally purchased as aquarium pets - were set free and have since greatly multiplied. Because they are considered an invasive species, they are now simply offered as a regional delicacy.
We present recipes of two Berlin based chefs: Berlin lobster in broth, served with a side of salad and French bread and grilled Louisiana crawfish served in Koji sauce, brown butter and lemon juice. What a delicacy!

All restaurants are currently closed. But normally, staff has to wear it and guests until they've reached their table

No they are invasive in China as well, the ones in China are from Loisianna that then came to Japan as pets then to China.
The ones in Berlin are probably directly from Loisianna from someone who let them go from an Aquarium.
Killing by cooking them is not humane.

@@tarjei99 you clearly haven't or they would have explained what I said.
They're small so it would be impractical to kill each one by hand by snipping the spinal nerve column like you can with a real lobster. Perhaps you could par-freeze them instead, although in a restaurant situation that's very difficult to manage because you don't know when they're going to be ordered and if they freeze solid it can make the meat tougher.
