Looks like you're really having fun. My Daddy made beef tongue for us first time in 1960. I was a little boy. It was delicious. Also he made mountain oysters and some rabbit chili. He had several heart attacks. Passed on to Glory in 1979 at 81. Simple country food is the best. Also I saw cooking video, man had geese and ducks. He killed them for the table and fed the scrap meat back to the flocks and the chicks. Unacceptable. Made me almost cry. People are crazy today. Our parents and forefathers lived clean. Thank God for them. Good show so far. See ya

Never had it but I have to say it looks a lot more edible prepared than it does in it's natural state! Nice piece of work!

I cook this sous vide often with oxtail - 173F for 24hrs. Bay leaf, peppercorn, salt, dry onion, garlic powder... been eating that for 55 years...

We grew up eating that over the winter when I was a kid. Although my mother didn't know how to cook it. She did not take the skin off and the whole thing was on a platter on the table. Tastebuds and all (Gag) I hated it. However, the way you cooked it looks much better fur sur!

Thanks for posting, really fun recipe. If you drop that tongue in an ice bath for about 60 seconds, tongue is easier to handle and helps to get the skin off... Cheers!

Beef tongue tastes just like pot roast to me. I'll have to give the brine a try!

That's how I kinda do it, no wet brine; I crockpot it with salted water. Everything else I do is mostly similar, except. I drink my spirits 😅 not cook with it.

I am going to try this brine it, boil for a couple hours, remove the skin and then finish with fire on a reverse flow smoker instead of pan frying.

Working Class Woodsman maybe dissolve your sugar and salt in some boiling water first, then adding that salt sugar solution into your brine ?
