Pulled Pork
Pulled Pork:
2 - 7lb pork butts (I bought a 14lb bag at Costco)
1 cup Mustard or Sriracha
1 cup braising liquid (I used sparkling apple juice but you can use beer, apple cider or plain apple juice)
2 cups Pork Rub:
* 1 cup packed brown sugar
* 4 tbsp. kosher salt
* 4 tbsp. paprika (use smoked paprika if using oven for only)
* 1.5 T garlic powder
* 1.5 T onion powder
* 1.5 T ground cumin
* 1 T black pepper
* 1 T liquid smoke (If using oven only)
Direction:
Pat dry your pork and score the fat
Rub in the mustard or sriracha
Generously season with the pork rub
Smoker:
Prep your smoker and set to 250 degrees and place your pork directly on the rack.
Oven:
Set your oven to 250 and place your pork on a rack over a foil lined sheet pan
Insert your meat thermometer in thickest part and smoke/bake until an internal of 165 has been reached (about 4 hours)
Transfer to a steamer pan, pour in 1 cup braising liquid.
Cover tightly and return to your smoker or oven set at 210 for 6-8 hours until an internal of 203 has been reached (I do this right before bed and take it out in the morning)
Allow to rest covered for 2 hours
Remove the liquid (do not discard) shred your meat, then pour the liquid back in to your shredded pork to your desired consistency
Freeze up to 6 month. Use in sandwiches or soups or over tacos or nachos
BBQ Sauce:
* 3 cups ketchup
* 1/2 cup apple cider vinegar
* 1/2 cup tablespoons brown sugar
* 1/4 cup honey
* 2 tablespoons Worcestershire sauce
* 1 T smoked paprika
* 1 T dry mustard
* 1/2 T garlic powder
Directions:
Combine all ingredients in a saucepot bring up to a boil then down to a simmer for 10 minutes until thickened
Slaw:
* 4 cups shredded purple cabbage
* 1/2 cup Mayo
* 2 green onions thinly sliced
* 1 T vinegar
* salt, pepper and sugar to taste
Directions:
Combine all ingredients
Mix your barbecue sauce with the pulled pork and warm. Place over a toasted brioche bun followed by your slaw and Dill pickles

I deeply admire people who have to patience to make dishes that take a lot of time and energy cause I can barley stay focused enough to cook food that takes longer than 20 minutes
There's barely 20 minutes of work in this pulled pork, but it's divided in chunks with many hours of break in between. And you have meat in the freezer for weeks!

I did the steamer pan after watching this video and was really happy with the results. My only mistake was adding all the liquid back to the pulled pork. Once the meat cooled in the fridge, the fat had congealed around the bottom half of the meat and was less convenient to use. Next time, I'm going to use the drippings as a stock in a bean soup along with the pork.

Chileeeeee I’ve never seen meat so tender in ALL MY DAYSSSSS I just recently went pescatarian for the second time and I’m questioning my choices rn 😭😭😭😭
The trick is to cover it. The lid (in this case tin foil) traps the moisture in. It's the reason I never cut holes in my turkey bags. 6-7 hours in the oven, and the meat falls right off the bone. Literally. I tried to pick up a drumstick the last time I did a Thanksgiving turkey, and everything just fell back into the pan. XD
You can do similar things with fish. Take a look at the method of 'en papillon', or 'in paper'. You can do the same thing with tin foil. If you're not using butter when cooking fish in a pan, add a few tablespoons of water and cover with a lid. Acts sort of like a steam bath, and it'll come out nice and tender. If you want a sear on it, use only a few teaspoons, cover until mostly cooked and water is almost gone, uncover and increase heat slightly. Once the water has completely evaporated (not so much that the fish is burning, drying out or sticking though), drizzle a little oil in. Add it either on top of the fish or down the side of the pan. Finish cooking until center is done. :)
I'd offer you a few recipes, but they're not pescatarian friendly. 😅

I do similar with a sous vide tank. I have to use a bit of liquid smoke, because I don't have a smoker. I leave it in for 3 days and it comes out awesome.
I have a question what’s the perfect temp for souvide when doing pork?
I use a Pit Barrel Smoker, vertically smoke until wrap then grate wrapped until butter soft. Takes 4-5 hours

Fat renders at 203 degrees. Done temp. 190ish….. wonderful temp. 203.

Smoked a brisket, pushed through the stall to 180, wrapped it in butcher paper and took it to 203. I left it the paper and put in a cooler to rest for 3 hours and it was the best, most tender brisket I ever smoked ….. I’ll never go back. Good luck brother!!
