Which is better/easiest? To have a resin print engraved before or after casting?

This will depend on the size and placement you have in mind. However I would clarify that you don't engrave resin, but rather I would print the item with the debossed lettering already in place. Especially if it is a makers mark or anything on the inside of ring shanks.
If its lettering on the outside of your ring shank or other designs then I'd use something like the Andu engraver.
This will also depend on the reliability of your chosen resin in comparison to your engraving skill to achieve the best possible product.

Engraved details will generally be sharper in comparison to embossed/inlaid details from a casting. Due to the high surface tension of molten metal, casting inevitably produces a loss of resolution in fine features. This can be mitigated somewhat by the sophisticated high-vacuum setups used by professional casting services.
