  • Easy Dinner Ideas are so hard to come up with sometimes! I feel like I get stuck in a rut and can't find my way out. But NOT THIS WEEK!!! I found some new gems that are must trys!!!!

    Quinoa Fajita bowls
    3 bell peppers
    1 onion
    1 C quinoa
    2 C chicken, chopped
    3 TBS olive oil, divided
    Chop vegetables and sauté in 2 TBS oil.
    Prepare quinoa according to package directions.
    Chop chicken.
    Remove sautéed vegetables from pan. Add 1/2 C water to pan and dissolve what is remaining on the bottom of the skillet.
    Add chicken to skillet and cook until water is cooked out.
    Serve in bowls by adding vegetables, quinoa and chicken, as well as your choice of toppings. I used sour cream and salsa.
    Bone broth
    Place carcass of chicken into slow cooker. Cover with water and add 1/4 C apple cider vinegar. Cook on low for 8-12 hours. Store in refrigerator for 2 weeks.
    Special Chicken and Rice Soup
    3 rubs celery, chopped
    1 onion, chopped
    2 TBS olive oil
    6 oz mushrooms, chopped
    2 C chicken, cooked and chopped
    1 C rice
    6-8 C chicken broth
    2 tsp salt
    3 eggs
    3 TBS lemon juice
    Sauté celery and onion in olive oil in a Dutch oven. Once softened, add mushrooms and chicken to Dutch oven. Add 1 C rice and 6-8 C broth. Cook soup until rice is softened. Scramble eggs with lemon juice and temper with 1/4 C warm broth from soup pot. Slowly add egg mixture to soup, stirring constantly.
    Allow to cook 5 more minutes.
    Soup is ready to serve when all ingredients are well combined and soup is thickened.

    Everything looks delicious. There's a guy that I'm subscribed to. His channel is, cooking with Dave. He does keto, plus others. He makes a lot of food using cottage cheese. It's really interesting. ❤

    Oh my goodness at your little guy. He's so cute. Give him a little squeeze from SC for me. I have three not so little boys now (plus three girls as well). The boys are all taller than me now.
    I did want to say that I really like your video here. And even though I had voted for one of the other thumbnails for it, it still turned out great. 😊

    I always break the rotisserie chickens when I get home into a ziploc bag. Easier when it is not cold.

    Lori these all look great and all seem very inexpensive. I make chicken broth all the time with my rotisserree chickens. Take care and I look forward to the next one. Also Lane ia an adorable little helper.

    Love your channel and encouragement in the kitchen! I found Walmart has a wild rice from Lundberg Family Farms. Just under $5 for a 16 oz bag and no ingredients except rice!

    Hello Lori , your quinoa dish looks like the twin of mine. Funny how we stumbuled on the same recipe , you in the US and me in France. I'm French and am always looking for other countries recipes that don't cost a fortune . My every day cooking is Mediterranean with of course lots and lots of veggies. Have a good day 😊

      Oh wow!!! I went to France when I was in high school and I still remember the French bread and pea soup. SO GOOD.
      Cooking Mediterranean dishes regularly, do you use the egg and lemon juice method a lot? I had never heard of it before.

      @@homemadesimplewithlori I use a lot of lemon juice but the egg+lemon juice not so much because for me eggs are often my lunch protein and I don’t wish more eggs for dinner , but I sometimes cook soup with plenty of veg and 10 minutes before the end I take lasagna pasta cut it nto small chunks ( no rice ) let it cook then add the egg+lemon juice thing . Yummy soup ...

      Dividing the number of servings by the cost.
      I used half a rotisserie or less in each meal, which costs $2-$2.50, which would be the largest cost in each meal. The vegetables range in price but I am in Alabama and am using aldi costs.

    These all look so good, Lori! I've never heard of the scrambled egg trick, but it's a great way to add a bit more protein and use your farm fresh eggs. I just love watching Lane. He seems to be doing so well. You two are blessed to have each other. ❤ Thanks for this video.

    I have a tip for those with a little time. Get a whole reduced chicken and put it in instant pot. You have meat and broth. Meat can be used for different dishes. Another option!

    I pull the meat off the rotisserie with my hands once it's cool enough to handle but still warm. Meat comes off so easy. I'm aweful at cutting a whole chicken with a knife!

    I didn’t read through the comments so someone might have already said this- but the biggest tip I have for handling the chicken is to take it off the bone when it's still warm. So much easier!

    Quinoa has protein as well as fiber. I love Farrow another ancient grain. Good recipes

    Thank you for the dairy free soup tip! I have really intense acid reflux with dairy and am going dairy free and I love soup, so this really helps!

    Love rice but don’t like quinoa , so I would switch it out. One cup of uncooked rice makes three cups cooked . So you needed more broth . I would make the rice separately and add it last . Love the egg trick . Thank you ! 🥣

    I did the same thing when I tried to make chicken and rice soup the other day. The rice totally overwhelms the soup and sucks up all the fluid. You need to cut the rice at least by half and maybe just a third of a cup. I tried to add more chicken broth after I had used one cup of rice with my soup, and it still was too much rice. Anyway mine just came out mushy. The amount of rice looks tiny but explodes in the soup!

    I've never had quinoa. It looks really hearty. I should put it on the grocery list.
    Flip your chicken over then you can break it in half. Take your knife and carefully slide it between the breast meat and bone. It takes a lot of practice but you'll get it. You'll feel the joints where you can also cut the drumsticks and thighs away from the rest. Have a great week!❤

    They all look delicious but the first one is my favourite because of all the different flavours.
    I like stews in fall. My favourites are osso buco, beans stew, chicken with beer and cream and beef stew.

    Hello!! Would you please share how you make broth from the rotisserie chicken? I think you mentioned that you put the left over chicken carcass in the crockpot. How do you cook it to get broth and for how long? I appreciate you so much. Thank you for answering my question. I love your videos and especially when Lane helps.       Hi! I put a quick explanation down in the comments but it may not have come across clearly.
      You can just put all of your chicken bones and skin in the crock pot and cover it with water. If you add 1/4-1/2 C apple cider vinegar to the water it will help pull out more of the collagen from the bones. Put the crock pot on low for 12 hours or so and that is it!! You can even cook it for longer. I would say 18 hours would be the longest you would want to go.
