      Not out of thin air. American Nancy M Johnson had made a similar one in 1845 and sold the patent to a local man. Crank ice cream churns were very popular in the US (where ice was easier to obtain) by the mid 19th century. It made ice cream an affordable commodity for the middle class for the first time.

      Oh yeah. It seems she was a genius inventor, had a disturbing knack for business organization, and was a striking beauty to boot. If she had access to something like Food Network she could've taken over a large chunk of western cuisine something fierce.

      I would totally watch that. A Victorian woman laying the groundwork of the modern food culture as television content. A bit like how Emeril shaped what would become televised food shows in modern times. But maybe that's just because I find posh British accents to be both inherently humorous and a bit endearing.

      @@anti-ethniccleansing465 It's a Japanese term, short for "gachapon", which refers to machines that sell random toys in little capsules. As far as I'm aware, the term "gacha" started spreading in English due to"gacha games" - games with heavy loot box / random draw mechanics.
      If you're interested in learning more, "gachapon" and "gacha game" are good search terms to start with.

    I would guess the brandy acts more like a ice deterrent more than a flavouring agent. It should prevent the ice cream from making ice crystals since the alcohol lowers the freezing temperature of water. :) Sounds like a fun recipe though!

      Not so much preventing ice, as keeping the crystals very fine, to preserve the smooth, creamy mouth feel.

      I also think that, by lowering the freezing point, it more readily melts in the mouth, which is actually desirable in icecreams even today. That lady was SMART!

      I have made a lot of ice cream. I used to think the vanilla extract most recipes call for was for the vanilla flavor. I figured out it has a larger effect because of the alcohol in it. So I started using a teaspoon of Everclear in a batch of ice cream to get the texture right and so I could use entirely different flavors

    The brandy is likely why it's creamy instead of sherbety. Alcohol freezes at a much lower temperature than water or cream. Too much and you won't get it to firm up, too little and it gets more like an Italian ice or sherbet instead of ice cream. Much like you need some but not a lot of salt in order to make bread. The salt regulates the growth of the yeast. The alcohol would regulate ice formation in the high water content of Cucumber Cream Ice.

      The freezing point of a 10% alcohol/water solution is -4 °C. Since there won't nearly be enough alcohol in the final mixture of this recipe to even approach 10%, I seriously doubt that the freezing point is lowered more than one or two degrees by the alcohol. As other commenters have mentioned elsewhere, it's probably got more to do with the alcohol affecting the size of the ice crystals rather than the temperature at which they form.

      I would think the fat is a much more relevant factor as far as the texture is concerned. If the fatty and watery components are properly emulsified, the fat will significantly limit how big the ice crystals can get.

That woman created recipes, taught classes, manufactured appliances, wrote a blog in her magazine that talked about relatable topics (poor quality of butter and cocoa) and even expanded her empire across the pond by touring! And the American media focused entirely on her image, as it still does now, with famous women.

    Went to an antique fair once where one vendor had HUNDREDS of her ice molds for sale, didn't recognize her name. They were astonishing! Almost unimaginably diverse. What an amazing business mogul she was! (also appreciate the little burn on Isabella Beeton, I have one of her books). I love ginger & cucumber as a cocktail so this ice cream, with a garnish of mint, would be perfection 🥰

      It's worth noting that Mrs. Beeton sold the rights to her manuals early in the game, and that for much of the title's run, it was neither written nor published by her. I don't care for the contents of the books, either, but I've learned why not.

      It reminds me of the drink, "Moscow Mule," which is a genuine (has alcohol) ginger beer, a shot of vodka, and a squeeze of lemon. I suppose a cucumber slice, longwise, might be a nice addition.

      I mean, you can if you want to. But it makes no sense to waste such time with the advancements made since.
      And I'm not talking about Agnes' moulds for ice cream.
      I'm talking about the long dead fad of making every dish using gelatin and moulding them in every shape possible for no apparent reason. It's been like fifty, to sixty years since that was still a thing.
      I mean it was probably fun… but other than the looks it definitely didn't improve anything that it didn't degrade as well…

      Metal molds for gelatins (which could also be used for ice cream!) are often found in thrift stores and antiques shops! Keep an eye out, I’m sure you’ll have a collection and be delighting guests in no time.

    We've got about a dozen Marshall moulds in our family. They're not used any more and they're not so ornately shaped, like a cucumber or what not. Come from a long line of cooks and caterers. Honestly, I've not seen them in a while. I hope we still have them and not sold them. I didn't realise they had such a history to them. I'll have to ask my parents about them.

      Remember that older pewter items were made with pewter that was made with lead, so they definitely wouldn’t be considered food safe today!
      Though I’m sure there are ways to coat the pewter and make them food safe, even if they would not be ‘original’ anymore.
      Alternatively I suppose you could make a mould from the original mould and cast it in something like tin so that you could have a copy to use to cook with and keep the original as it is for its history

    Knowing of cucumber as a vegetable of "cooling" properties, I kinda expected mint to be the complementary flavour to enhance cucumber icecream. Agnes's choice of spicy ginger here is surprising, but interesting nonetheless.

      Culinarily, opposites are so often paired. Hot fudge with cold ice cream. Spicy curry with cooling yogurt sauce. Fiery salsa with cooling guacamole. Smooth pudding with crunchy toppings. This is the norm in the cooking world - so this lady realized that so of course she paired a cool cucumber with a tiny bit of a punch of ginger brandy. She was clearly brilliant.

    I made this with apple juice as a substitute for the ginger brandy. It's delicious, one of the best ice creams I've ever whipped up in my kitchen. I'm going to mark it as a new favorite and insert a typed copy in my ice cream recipe book. Thank you, Mr. Miller.

      There's a popsicle shop around here that makes an avocado ice cream style. It's pretty delicious, and I imagine cucumber ice cream would be similar and more refreshing.

      @@JRiddelle Omg I have ALSO had avocado ice cream from another shop near me! Avocado ice cream feels like a year-round type of flavor, whereas cucumber elderflower is definitely a summer type of vibe. Both are certainly delicious though!

      @@masong695 Oh yeah, avocado is definitely heavier, where flavors like cucumber and lemon are lighter. I have a cookbook that notes that people *love* lemon flavored desserts because they taste refreshing, even if they aren't actually less calorically dense. I imagine cucumber is similar. And in summer you just want what feels cooler.

    Using cucumber as an ice cream flavor really reminds of Mexican “paletas,” typically a water based popsicle instead of cream or custard. They’re usually made using fruit flavors like strawberry, lime, or mango, but my favorite flavor is cucumber. Super refreshing summer treat!

      There is pepino Gatorade, at least in my area. I can see it being less popular in other markets. I've also seen paletas de nuez but I've never tried them.

    Lime and cucumber gatorade is delicious. Maybe the most refreshing of the lot. Traditional mexican lime-cucumber water is good too. A cucumber ice cream sounds incredible.

    I actually made this Ice Cream and it turned out pretty good, It was the talk at the dinner party I had. I used an ice cream machine but I performed the the same steps you did and I gotta say, if anyone have not tried this, You must. It may not be your first choice ice cream but it is unique and have a taste that will get the party talking (in a good way) I also added a tad bit more ginger brandy lol Thanks for sharing with us Max.

    When I was in middle school in China back in the 2000s, Lay's came up with cucumber flavored potato chips for the market. It was really popular, they still sell it and it was one of my favorites. Somehow they managed to incorporate the refreshing character of cucumber into salty potato chips, pretty amazing. It's an underrated flavor, the cucumber. We should have more cucumber flavored snacks!

    If I am correct, the brandy was added not only to add some flavor, even if barely noticeable, but to also lower the freezing point, making it more readily melt in the mouth. This feature is VERY desirable even today, though modern icecreams use fats/oils of different melting points for that effect instead, but the fact she found this feature so far in the past is a testament to her genius!

    The funny thing about cucumber taste is: Cucumbers barely taste of anything on their own, but if you add cucumber to anything, the cucumber notes can be extremely dominant and overpower notes that you'd believe to be much stronger.

      I didn't like cucumber as a kid, and complained that even putting it onto other things (like, say, salami on bread) and removing it again left an overpowering taste of cucumber. I've come to peace with the cucumber since them, but I still feel strangely ... avenged.

    When used properly, cucumber changes the nature of a dessert into still a dessert, but refreshing. I've had various cucumber flavored snacks in China, namely crisps and the like, and the cucumber makes the saltiness refreshing. That's why pickles are curiously refreshing even though they have all that brine and spice.

      i grew up with cactus syrup (in my country syrups are super common, every flavour imaginable to add water to and drink), but it figures it would be great as ice cream!
      I also had basil & lime sorbet, and recently had voilet, and saffron & tonka bean, soooooo good

      @Ellen Midgley - I have been using cactus fruits in my smoothies. It has fiber, nutrients, and a gorgeous fushia-like color, but is not very sweet or particularly flavorful. It also has hard black seeds that easily survive the blender, but they sink to the bottom of the mixture and can be avoided or you could strain them out. But that GORGEOUS color is so worth it!

    My intro to chem teacher in high school made ice cream using liquid nitrogen for us during the first week of class and had us theorize why it was so creamy with so few ingredients/so little churn time (it's bc of how fast it freezes, it makes the ice crystals smaller). Blew the minds of us 13-14 year old freshies

    During my chemistry degree we used to make liquid nitrogen ice cream once or twice a year and it was always a super fun day! The thought of doing it with liquid oxygen is terrifying though, that stuff is incredibly flammable and dangerous.

      haha if i need liquid oxygen I use liquid nitrogern to get it. Fill a styrofoan cup with liquid nitrogen and when it has stopped boiling as a little more so the cup is fullagain then you wait. Whilethe liquid nitrgoen slowlyevaporates it freezes out opxygen from the surrounding aier which collects at the bottom of the cup. When teh nitrogen is gone you should have 1/10 to 1/8 ofther amount of luquid nitrogen in liquid oxygen. You can tell by the color, oxygen is kinda blue.

      I enjoy cucumber-mint beverages, so I wasn't perplexed, per se. It is, however, unexpected. Definitely NOT an American staple - more of an Indian kind of thing.
      Cucumber-mint is a very subtle but very refreshing combination, and I'm willing to bet would make a suitable variation on this treat.

      Cucumber absolutely works in desserts. If you ever see some of those mini cucumbers for sale, buy them. They have such an intense cucumber flavour and a sort of floral taste that you don't notice with regular cucumbers, since they aren't as sweet. It's like watermelon but with a refreshing 'green' bitterness and more floral than fruity flavour. The flavour pairs really well with strawberries in my opinion.

      Cucumbers were all the rage in Victorian England, which is why the sweet slender salad cucumber is still called an English cucumber. They were used in desserts and drinks (e.g. Pimm's) - on a hot summer day I like adding thin cucumber slices and a sprig of mint leaves to my gin and tonic.

    When I saw the title I wondered if using lemon cucumbers (imagine a cucumber that looks like a tennis ball) would bring a different flavor. But then there are some other strong flavors in the recipe already. I have both green and lemon cucumbers growing in my garden, and assuming I get some actual produce from my seedlings.... I'll just have to try making this ice cream twice.

    This reminded me of a story from my family. So, my great-grandpa would always ask for cucumber pie. It didn't matter if it was Christmas, a birthday, or even a Sunday dinner. If there was dessert, he would ask, "Got any cucumber pie?"
    According to my ma, it was always a funny joke, until his wife made some, and made him eat it. Then, it became hilarious.

      Cucumber sandwiches are divine so all that had to be done is bake a pie crust with butter, salt and cracked pepper and let it cool until barely warm, sprinkle a little vinegar and spread mayonnaise thinly, and then stack on thinly sliced cucumber , sprinkle a little fine salt and pepper and serve

    You can almost make anything into an ice cream. I've done it with corn, rosemary, gorgonzola, parsley, and goat cheese. And I've seen garlic ice cream on a menu but have not made it myself. When served to guests who don't yet know what the flavor is, they can identify it as something familiar but can't readily name the flavor because it is out of context, making it a fun way to end an evening as everyone enjoys their cucumber ice cream.

    Love the lil caterpie just sitting there, it was a good fit for this episode. I think only him and metapod would fit for cucumber stand ins.
    Also really loved the colour of the ice cream its a really lovely shade of green.

    Cucumber works really well as a sweet, and it's too bad people shy away from it. In Mexico, one of the popular aguas frescas is cucumber, 'pepino', and it's fantastic. By the way, the alcohol in the brandy changes the texture of the ice cream, which is its main purpose. I love Agnes Marshall's recipes, and I'm glad to see you feature her.

    In the same vein as Beatrix Potter and her Peter Rabbit, I would love to see a movie adaptation (from the BBC) of the life and works of Mrs. Agnes Bertha Marshall.
    The level of ingenuity and flat out awesome business sense (especially the scenes about her presentations) would make it an instant classic.

      Misogyny, mostly. Things that women do well tend to get stolen or co-opted by men and only then became valuable. Think cooks and chefs. Cooking was women's work until women were producing amazing things, then men copied what those women were doing and suddenly those men were chefs and of course much more high class than anything a woman could do. Same thing with computer programming, the first "computers" were women and they were paid very little and respected not at all. Them came along electronic computers that needed programming, which was also initially done by women. Then men swooped in when this process was obviously going to be monetarily advantagious and as soon as men were doing it, it became much more valuable work and was paid as such. This is always how things go, if women are doing it, that thing is devaluted, if men are doing it, that thing increases in value. Women are invaluable to society, but we are always considered to be worthless. With Roe V. Wade likely to be overturned, we will then have fewer rights than a corpse. I feel hopeless right now.

      Because there is so little time to cover everything. They mostly cover world changing events or civilisations that were particularly groundbreaking. If you want to learn more then you need to do your own research.

    Cucumber ice cream sounds like a delicious flavor that sadly few would actually order because they'd be afraid of it being disappointing so they'd just settle for your typical chocolate or vanilla ice cream 🍦.

    My parents grow vegetables every summer and have a habit of "paying" me with free vegetables whenever they need my help with some physical work around their house, giving me brown paper bags full. Cucumbers are always in the mix, and I am VERY excited for this recipe, which I'll probably get a chance starting July.

    I think this is my favorite episode out of almost all of your videos (although I am quite biased toward the semla episode cause I'm swedish). The way you presented Mrs. Marshall made me fall completely in love with her! She seems to have been an amazing person and it's so great to hear her story. Especially considering how the debate over women's rights really ramped up over the course of the 1800s, she feels like a good example of someone who ran their own race despite the potential setbacks of her time.

    You mention asparagus dessert very briefly in the history section - I've had asparagus ice cream at an asparagus festival! Not as well strained as it could have been, as there were some fibers that made it texturally very weird, but the grassy flavor was surprisingly nice.

    Tell me you are doing another recipe/episode on her, she is fascinating!!! Wow, how do we not learn about, sing the praises of, this amazing business woman, engineer, inventor, scientist, and food celebrity? I hate that I am in such awe whenever I see a woman doing something cool in history. The truth is women were always there being bad asses, but no one ever tells us about them. Thank you for bringing this amazing woman and her accomplishments and impacts to light.
