Good Luck.
Eric your videos have helped my sausage making tremendously! It’s great to have a creator that responds to comments and helps people out. At this time I have a LEM half horse grinder and a LEM 5 lb stuffer which after making a couple batches of sausage I learned it is to small.
I have a smaller grinder but use a 10lb Hakka stuffer with dual gearing and it works great. Having a smaller grinder doesn’t matter as much but a large stuffer helps a great deal. Although the 10lb stuffer really only holds about 8.5lbs.
I have been watching your channel for a few years and have watched every episode of sausage making month. Great Job👍🏾 I use a 5lb stuffer and having one is a game changer. A dedicated sausage stuffer is almost if not more valuable than your type of grinder. Thank you for helping me elevate my sausage making game!
I do Polish snack sticks, Kabanosy and Myśliwska, dried to about 70% of the original weight. They're soooo goooood! I'm looking forward to trying my hand at fermented sausages. Thanks for your video lessons!
I used to help my granddad during our school breaks... make sausage to sell at the family's market. Using my KitchenAid now .your content is the easiest to follow and listen to. Thanks
I currently have a MEAT! Your Maker grinder, i love it - it is a breeze to grind my batches, usually 2-3lbs at a time. My stuffer is a HAKKA stuffer. This is the biggest step up in equipment by far. Coming from a kitchen-aid combo grinder/stuffer to this is night and day. The grind function did just fine, but the stuffing was always cumbersome with the KA unit.
I have a STX turboforce 3000 grinder that doesn't slow down. I cut my meat in strips, so it pulls through and i dont need to tamp it down. I'm not sure which dedicated stuffer I've got, but it works well.
I use a 10lb manual stuffer. It works good but hard to crank. You have taken over my life the last few weeks. We have been making sausage like crazy. Freezer is just about topped off. What a great channel. Keep up the great work.
Missed this one as I was off shore fishing in the gulf yesterday and yes I did catch a bunch of fish. As far as my stuffer goes mine is am102 year old( my grandparents bought it in 1921) enterprise 4 qt manual stuffer. The wife hates when I make sausage as I have her turn the crank. One little trick I do when doubled or triple grinding is to make the little ball and refreeze them before the next grind.
Thank you for all your help my friend! You have really changed the way I look at things as far as sausage making. You have showed me things I never knew! Just to mention, I use a Kitchen aid to stuff my sausage casing which you know is a pain in my pinky toe!
I used my KitchenAid briefly until I realized the limitations to put it mildly. I got a 5 lb stuffer because it was in my budget and it made a tremendous difference. I'm so thankful for Eric and the channel as I started my sausage making journey with season 1 of Celebrate Sausage and haven't missed a single video. Thanks for all of the videos Eric 😇👍
That's what I started with a few weeks ago! You were being polite when you mentioned that the KitchenAid has 'limitations'. I tried making Jalapeno cheddar smokies only to find that the cheese was getting stuck in the feed tube and very little was getting into casing. Flash forward to today and I have an 11lb stuffer with a meat grinder on the way. Talk about escalating quickly!
Just started making snack sticks in the last year. This channel has been so valuable. Thank you for the knowledge and guidance. As of right now my stuffing is done with a jerky cannon. Time consuming but very rewarding.
I've been using a small manual stuffer, but being able to use only 1 hand to manipulate the casing+stuffed end usually ends in more air bubbles, specially for medium to larger diameter sausages. Great job on the sticks, love this way you are showing that utilizes ECA!!!
My son and I made your chorizo recipe and it was a hit with the family! We have worn out a gourmia 500 watt grinder over the last few years. Keep making the videos! We love them. Thanks for your content.
By whatever means I obtain a sausage stuffer this pepperoni sticks will be the first I will try. Then all of the rest of your recipes. Whether or not I ever make even one sausage I love these videos with the sausages, the cured meats and the fermenteds! Thank you!
Thanks for another great video. I currently stuff my sausages using a 5-pound stuffer which works great as long as you are making smaller batches. The 25-pound electric suffer sounds perfect for any serious sausage enthusiast making larger batches.
Love the series. Using a cabelas grinder and a homemade sausage stuffer I found on marketpace sold by an elderly couple downsizing. The chamber is stainless from an old frozen custard machine. Still getting used to it but for $25 it is a big step up from using the grinder to stuff. Already made a few recipes from tge channel. Thanks!
I’ve only dabbled in sausage making prior to the internet. It always turned out to dry or too wet. And yes…..I use the kitchenAid mixer plastic stuff that’s all broken. I’ve learned so much from your channel. It has sparked me to get back into it. Thank you.
I have been making snack sticks for a few years now, I started out using my grinder to stuff them with an attachment made for doing snack sticks. I bought a budget 7 pound stuffer and it works so much better and faster. I haven't tried making the pepperoni ones yet but it is on the list to try.
Eric , love the attention to detail on all of these videos. I don’t have any equipment at this time . If I were to win stuffer I would pass it along to my son . He has used your videos to get his sausage hobby started. He is the person who told me about your channel.
Great series, I have many of these sausages marked to try. I use a 1 HP grinder, I started using a kitchenaid attachment but the step up to a "real" grinder was one of the best things I did.
This will be my first trip into the snack stick world. I’m following the video you posted on handling sheep casing awhile back which I hope makes things easier. My dedicated stuffer is a small five pounder that’s a little temperamental but it’s what I’ve got. I’m looking forward to making these snack sticks. Thanks for the recipe guys.
We usually make sausages as a family, mostly fresh but some smoked too, love this recipe for sticks. That electric stuffer seems to make things easier, we usually stuff with the grinder horn but get all mushy.
I use the 5 lbs sausage maker stuffer and have been getting great results just hoping to scale up now that I realize how much easier it is to do large batches. So far it's been another excellent season thanks for everything!
Another great recipe. Currently using a 25lb manual stuffer. I was impressed with your review on the featured stuffer. Definite consideration for equipment addition. Thank you again for your time and knowledge.
Thanks for the great show. I use a Meat 1 hp grinder and a Meat 5 lb manual stuffer. Since I make sausage alone, having an electric stuffer would really make stuffing much easier.
I use a Smokehouse Chef grinder designed for the Kitchen-Aide. All stainless steel, dishwasher safe.. does an excellent job. Bigger grinding tasks are done by my LEM #12. Paired with a 5lb stuffer, that 25lb electric would ne nice! Excellent video today, I'll be trying these soon. I probably make a batch of sausage every 2 weeks or so. Thanks again for the series!
Been working to up my game on sausage and no doubt, these snack sticks are on my list. Still using the very basic equipment, Kitchen aid for grinding and a small 6-pound horizonal stuffer. Fingers crossed, by this time next year, I will be cranking out tons a sausage and snack stick with all new equipment. Thanks for all the content, love the videos.
I use a 5lb stuffer after watching last years celebrate sausage. I started using a kitchen aid mixer grin der attachment but found it easier with a dedicated grinder.
Your channel is probably my favorite on UA-cam! I love the detail that you go into on every recipe! I've been using my uncle's antique Wagner Stuffer #2. It's works but is extremely heavy and cumbersome. It would be great to not have to break my back just getting the thing set up! Thanks for the great content!
I don't have a stuffer yet. I am fixing to start making my own deer sausage. I started watching your channel a while ago and saw how easy it is to make sausage and started buying the equipment a little at a time. Thank you for such a great channel.
Thank you again Eric for all of the amazing work that you and your team provide. you have turned me on to sausage making both fresh and dry cured. hopefully one day I will have to try this recipe for the pepperoni snack stick. keep up the amazing work, we all appreciate it.
Thank you again for making these videos for us to look back on to help us decide what to make for sausages. I want to try everything you have put out this month! I bought an off brand stuffer to get my feet wet, but an electric would sure be nice when you don’t have help when needed!
Im just starting in this hobby with a kitchen aid atachment of both grinding and stuffing, just 2 recipes made both from 2 guys and a cooler and came out AMAZING!!! I would loveee to make this more and more!
I've made a lot of sausages, but never pepperoni snack sticks. I can't wait to try this out. The encapsulated citric acid seems like a nice touch also! My current setup is a 0.5HP grinder and a 10 lb sausages stuffer. Both are just "ok" and I've been eyeing The Sausage Maker's products for upgrades for a while!
I have a dedicated hand crank stuffer and I made my first batch of jalapeno cheddar sausage with it 2 weeks ago. It is some of the best sausage I've ever had!
I am currently using the Kitchen Aid setup with the grider and stuffer. I enjoy this series, and I also appreciate your video format and educational style. Please keep up with having consistent explanations and tips in the videos.
Again, great content. I just purchased the 5 pound stuffer. When I win this electric model I'll still be able to use the 5 pounder for smaller or test batches and hopefully gain experience and production with the larger model. Thanks.
Thank you for the recipe Eric. I currently use a manual stuffer and it takes every muscle in my body to get the forcemeat through the smallest horn. The electric stuffer from the sausagemaker sounds sweet!
Thank you for your videos. I have been learning a lot. I currently have a meat your maker 5lb manual stuffer. It works. But an automatic 25lb stuffer would be a game changer for sure.
Eric, thanks for the videos. I am really enjoying the sausage series. I stuff w/ my grinder, which works fine for the sausages (larger) that I have made. The SM stuffer would definitely up my game! Thanks again for the videos.
I used my cusinart sausage filler attachment once 😅 then i bought a 10lb vertical manual stuffer 😂 takes half the time and ten times as easy, but last time i made snacksticks in 19-21mm sheep casings, the stuffer almost tiltet 😊 so on my wishlish is a electric with foodpanel, so i can make it on my own without help
I use a KitchenAid grinder and stuffer, but thanks to you and your videos I feel confident enough to start branching out and updating my sausage stuffing game. Thanks for all your videos, u are amazing and very helpful
Love this recipe and your unique technique for mixing it all. I have a cabelas grinder, but currently no stuffer. Your videos have been an absolute inspiration to me and I have learned so much. I can’t thank you enough and the Sausage Maker for sponsoring you!
Good video. I purchased that stuffer after watching your review of it. Living just seven miles from the Sausage Maker I'm there quite often. I have a Valley Sportsman #22 grinder and 50# meat mixer. I also have the 30# Country Style smoker that I modified to operate with an Auber PID. My next batch of sticks will be made with sheep casings. I'm done with collagen casings.
I have a really old Hobart grinder, I'm limited on the size I can get down to so sticks are not an option. I was thought to freeze the auger, blades and plates and to use nearly frozen grind with ice mixed in to keep everything cool when making sausage.
I’ve always been of fan of sausage and snack meats and since I came across you channel and the way you explain everything, I’ve been extremely enthusiastic of trying to make my own sausages and snack meats. I’ve never owned a sausage maker or a meat grinder other than my parents old hand crank grinder😂. Great instructional video❤
Like many folks here I started out the wife's kitchenaid mixer and shortly made the move to a 5 lb stuffer that works quite well for small batches but it can prove to be a bit of a handicap with larger batches or when making summer sausages .
I made some venison cheddar jalapeno snack sticks once, about 15 lbs. I used a 5 lb manual stuffer. It took 6 hours to stuff the collagen casings. They tasted great but I promised myself I would not make these again until I get an electric stuffer so I definitely entered this contest.
Great video. Love this channel. I’m using a LEM 5lb vertical sausage stuffer. Would good but I either take a long time stuffing by self as I have to crank the handle myself and try yo manage guiding the meat out of the horn or enlist a helper to crank the handle. I’m also using a 1/2hp carnivore meat grinder from Cabelas. Love it and the stuffed over the kitchenaid I used for a couple of years to grind and stuff the meat. It always left black ground metal shavings which I always had to pick out. Been thinking of converting my 5lb sausage stuffer with a small low rpm motor but haven’t gotten around to doing it. An actual production electric one would certainly be better.
found 2 new favorite channels today because at 43 i still like to learn, 6 videos in... thank you Eric,.. at least that's what everyone else calls you... lookin forward to finishing season 4, yay for season 5
Thank you for the inspiration. i will be adding this to my list. I am using a 1HP sausage maker grinder to grind. its great and I have had it for many years.
I bought a five pound stuffer a couple of years ago and since the Sausage Maker was out of stock for a couple of weeks in a row, I bought one from someone else. It really is a game changer if you had previously been using a grinder to stuff.
I have a small 5 pounder stuffer and an upgrade would be great. Excellent season and I can't wait for season 5. I'm currently working on a recipe and once I perfect it, I'll find the way to send it to you to see if it can be included in season 5. Exito!!!
An old electric grinder. Snack sticks are awesome! one day I'll have a curing chamber. The last time I pre-seasoned my sausage before grinding, I had a heck of a time trying to make snack sticks. The meat was so sticky, it was a real pain getting it through the horn. That electric stuffer is really nice, I'd try it again with one of those!
Eric my friend you made my day. I love pepperoni. So much so that when it comes time to make pizza I wind up eating as much pepperoni as what goes on the pizza lol. Now I have a go to that will insure that I will have enough to build another pizza. I love your tip by balling up the meat to get that cold sticky meat to make another pass through the grinder. I started out using my meatgrinder to stuff but made the big upgrade by getting a 5 pound stuffer that has a high and low gear crank, just move the crank handle to which speed I need. That was such a game changer. Thanks and see you tomorrow.🤠
Hey Eric! Appreciate the videos they help me up my game for sure. My current grinder is a Cabelas 3/4hp commercial carnivore. Only because my old one burnt out last Easter and Cabelas was open! Thanks again for passing on your knowledge.
I bought a neglected 3hp grinder and renovated it. Thing is fierce! I originally bought it to coarse grind chicken carcasses for my dogs, they get an amazing mix of various meat, bone fat and organ based on animal percentages. Anyhow I also now use it for my sausage grinds, although with a larger grind holes because of the power of that thing! It's so fast it actually removes the need for my stand mixer to break the meat down. I actually keep the grinding worm and blades, cutters in tie freezer for a day before use, one run though is generally all that needed. For stuffing, hands up I use one of the cheapest stuffers I could find while I wait for a bargain on a used pro model.
I am currently using an old antique cast iron stuffer. We usually make our sausage in 25 - 50 lb. batches, so I would be thrilled to win that stuffer. Eric and The Sausage Maker, thanks for another awesome month of Celebrate Sausage!
I haven't made any yet but have wanted to for some time. I've been binge watching your celebrate sausage series's they have given me the confidence to try.
My current sausage stuffer is just an attachment to the kitchenaid mixer. It really is such a pain to use when making sausage. It’s slow, and it creates a massive vacuum in the little feeder tube, so pushing the meat through is hard. Love these videos though, always keep getting new ideas when celebrate sausage comes out! Just gotta upgrade the equipment so I can keep making what I love
Love all your videos, as you know! I've been using a 5 pound magical stuffer, while my dad has been borrowing my 15 pound manual stuffer...both take a lot of time and effort. A 25 pound electric one would be a game changer for us!
Im a backyard bbq person who likes to cook and improvise with new flavors. Two of my favorite things you definitely don’t find in Florida are hungarian salami and kabanossi sticks, so watching season 2 made me realize i gotta do something, after been almost done with season 4, I already own a #22 MEAT! grinder, a 15lb stuffer (manual) and a 7qt mixer. I’ve done more than a few of your sausages and man!!! I I have enjoyed every single one of them. Now im just working on those flavors im looking for. I appreciate what you do. And by the way, supplies from the Sausage Maker, meat from my local butcher shop and the best pork from Porter Road make me very pleased
I have only given snack sticks one prior attempt. They were way too wet and mushy. I wound up drying them some in my drying chamber to try to salvage them, which helped, but then they were too dry and crumbly. I love your videos. I always pick up little pointers about my technique.
I currently use a manual 5lb stuffer like you've been using all season! It works amazingly. However, for larger/bulk batches, it would be great to eventually have an electric stuffer! Thanks for another great season!
I hadn’t even considered snack sticks, but as usual, you make everything look so easy and so good with your videos that I am rethinking them. Thanks again for how informative your videos are. It’s easy to see how much you love what you do!
We use the cabelas #42 commercial grinder for everything. We have been using the stuffer attachments with a foot pedal. We would love to have a dedicated stuffer for all of our sausage. We love the channel and have made many recipes. The best is the Capocollo.
I usually make 10 lb batches of snack sticks and they turn out pretty good flavor and texture. I grind with a number 12 electric grinder and recently picked up a 15lb hand crank stuffer. When you make more than 10lbs its nice to have an electric stuffer verses a hand crank.
Good morning, Eric! I am currently using an "As seen on TV" grinder/stuffer and even tho it does the trick for small scale sausage making, I am really wanting to up my game. This electric, dedicated stuffer would really help me take it to the next level!
Hi Eric. Love the celebrate sausage series. I have a older grinder that Has seen better days. Its very loud and feeling its age. I have a manual stuffer but would love to move up to a electric one. Live the channel! Keep up the good work!!
Just purchased A LEM 10 lb. electric stuffer. Always used the hand crank before. Hopefully it will be a game changer. Really enjoy your channel and trying your recipes
Thank you for doing this video. We have tried making snack stick's in the past without much success. I believe we can deliver a better product following your instruction. One aspect of our sausage making process that has become more challenging is our stuffer. After an injury to my neck in 2020 I am partially paralyzed in my right arm. This makes it extremely difficult to use the 15lb manual stuffer. When it comes to the sack sticks, I can't exert enough pressure to operate the manual crank. An electric, foot operated stuffer would be an excellent tool.
Love snack sticks!! One of my favorite remains the Kabanosy. I have a 5lbs from TSM which works OK but need a second person to crank the machine because the small diameter does generate quite a lot of pressure.
Thanks Eric. Another great one! just ordered a kitchen aid grinder but thinking about returning it and going with a dedicated meat grinder was thinking about a grinder from "meat your maker" but i think you channel has me leaning closer and closer to the #12 from the sausage maker. Thanks again for all your hard work and amazing sausage making content!!!
Another great recipe! I am currently using a manual 5 lb stuffer by Hakka. I hate having to reload all the time, but it gets the job done. A new electric would make my world. Thanks Eric for a great month of videos, kepp up the great work!
Wow! I just found your channel today while searching for a recipe to make summer sausage. I currently use my meat grinder to stuff casings and have had some issues making my venison sausage. Thanks for the education in every video.
I current grind with a #22 grinder, best upgrade I've ever made. However, I stuff with a 5 lb and 15 lb manual stuffer, good but for the larger batches it can take a bit of time. An electric one would be awesome.
Love you videos, been making your Kabanosy, and Roasted Garlic & Smoked Sausage, along with others. My stuffer is an old Enterprise fruit and sausage stuffer. Love to have something more modern. Thanks again Bill
First let me thank you, I started watching you a couple of years ago. Unfortunately, I was out of the country at the time. At this time, I purchase a dedicated stuffer. Prior I have always used my grinder to stuff sausages. Although good I could never get anything other than large summer sausage to turn out. Now that I am back at home I am looking forward to trying out your advice and tips.
Just finished my 2nd batch of pepperoni sticks. Almost perfect except the casing was a little more chewy than I like. I have a dedicated stuffer but I made a small 3lb batch, just used my jerkey gun for that. Worked well enough.
We have one final giveaway this month, be sure to check out the following video for all the details. Pay very special attention to the instructions on how to enter.
25 LB Electric Sausage Stuffer from The Sausage Maker: ua-cam.com/video/0S8SzS2hN9s/v-deo.html

A plastic transmission funnel works for stuffing sausage
Does the dry milk have to be high heat or will normal carnation non fat dry milk work?
@@skillitjohnson it should be high heat dry milk

Again, great content. I just purchased the 5 pound stuffer. When I win this electric model I'll still be able to use the 5 pounder for smaller or test batches and hopefully gain experience and production with the larger model.
Thanks.
I have a manual 5lb small sausage stuffer. I love it even for up to 25 lbs of sticks. I don't make them but once a year so it works for me.
Great Job Eric. Love the information you give us. We use a 1.5 hp grinder to grind our meat and a manual stuffer.
Great idea, peperroni snack sticks. I use a 10 lb manual ebay special stuffer lol. Ive had it over 15 years id bet and still works decent enough
Hello Eric, love the video, currently using a 20lb sausage stuffer for my sausages. Your celebrate sausage series get's better every year. Thanks
I use a Lem #8 grinder. Works well for the small batches I make.
found 2 new favorite channels today because at 43 i still like to learn, 6 videos in... thank you Eric,.. at least that's what everyone else calls you... lookin forward to finishing season 4, yay for season 5
Thank you, I'm the same way... Always learning😉
Just a manual stuffer for me right now. Looking to update to a automated stuffer soon! Thanks for the awesome channel !
I have a small 5 pounder stuffer and an upgrade would be great. Excellent season and I can't wait for season 5. I'm currently working on a recipe and once I perfect it, I'll find the way to send it to you to see if it can be included in season 5. Exito!!!
I followed this recipe but substituted a F-LC fermentation in place of the encapsulated citric acid. The snack sticks came out incredible. Thanks!
I use my grinder for stuffing. thanks for doing this sausage month, I've really enjoyed it!!❤ and thanks to all the amazing sponsors as well.
Yet again another great video.
I have a small dedicated stuffer. Would love to up my game with the larger electric stuffer. Thank you for all you do.
I hadn’t even considered snack sticks, but as usual, you make everything look so easy and so good with your videos that I am rethinking them. Thanks again for how informative your videos are. It’s easy to see how much you love what you do!
I just bumped it up a notch and got a sausage stuffer. Now I’m ready to try snack sticks. Thanks for your videos.
Just got our smoker so we are new to making sausages. Tried a few times but never had a great flavor with them. Excited to try this!
I started with our KitchenAid now have a small 5lb one but want to get a bigger electric one.. love this channel and all the help you provide
I use a #12 LEM grinder at the moment. Have a manual two speed stuffer, but with a bad dominant shoulder it's not so easy to use anymore.
Thank you. Love the series. I use my KitchenAid for all my work with sausages. God Bless and stay safe.
I current grind with a #22 grinder, best upgrade I've ever made. However, I stuff with a 5 lb and 15 lb manual stuffer, good but for the larger batches it can take a bit of time. An electric one would be awesome.
Thanks for all the hard work and videos! Dont have a stuffer, hoping that'll change soon! Thanks for everything
Love you videos, been making your Kabanosy, and Roasted Garlic & Smoked Sausage, along with others. My stuffer is an old Enterprise fruit and sausage stuffer. Love to have something more modern. Thanks again Bill
Thank you for all your hard work putting these out. I use my grinder to stuff
Hello Eric, love the video, currently using a Kitchen Aid Mixer to stuff my sausages. Your celebrate sausage series gets better every year. Thanks
I have a manual 7L stuffer. This is a great recipe. I will be making it on a regular basis. Thanks
Just finished my 2nd batch of pepperoni sticks. Almost perfect except the casing was a little more chewy than I like. I have a dedicated stuffer but I made a small 3lb batch, just used my jerkey gun for that. Worked well enough.
Once again you have help me thank you. I do have a dedicated sausage stuffer but i would like to upgrade to a electric sausage stuffer.
Love this recipe going to make it. I use my grinder to stuff for now, but have one on my Christmas list..
