Love these videos, this is one of my favorite random subjects, and the hard bottle I've never seen before, that is such a cool and easy way to demonstrate these physical forces!
I wouldn't say the water is forced out of the balloon by the atmospheric pressure. The atmospheric pressure on the bottom pushing the water up is almost entire cancelled out by the pressure from the top pushing the water down. The difference between those two is enough to lift helium, nowhere near enough to lift water. It's the elastic tension in the rubber that pushes the balloon up - and it's the atmospheric pressure from the top that resits that while the stopper is in the bottle of the bottom preventing the pressure from reaching the bottom of the balloon.
This was rather interesting. Never heard of these.
